Simple BBQ Breaded Chicken

Are you ready for an easy, super frugal meal? This is simple to make, requires only three ingredients to make this breaded chicken. Two simple, cheap ingredients and chicken breasts (which I realize aren’t all that cheap!).

As I said, simple. Start with two shallow bowls, one with bread crumbs, one with your BBQ sauce of choice. I lucked out a few weeks back and Walmart had Kraft BBQ sauce on sale for 50 cents each, I grabbed a few.

Simple BBQ Breaded Chicken

I cut my chicken into chunks to make them easier to work with and so they would cook faster. Pat your chicken dry or the BBQ sauce isn’t going to stick. Cover a baking sheet in tin foil and coat with non-stick spray.

Start with the BBQ sauce, drag your chicken through it to coat. Then coat in bread crumbs. Lay on your baking sheet. Repeat.

Bake at 400 for 15-20 or under cooked. The size of your chicken pieces will determine how long it takes to cook.

Despite how it looks here, they didn’t stick at all. And just lightly crisp around the edges. This breaded chicken was super tasty, and three of my kids love it!

Slow Cooker Chicken Stew

Fall weather is in the air and I have dug my slow cooker out from under my cupboard. After all it makes meals while I am homeschooling my kids with very little help from me once it gets going. This slow cooker chicken stew is perfect for busy fall days.

This started off as needing to get something started for a day spent working on our house. Because we have harvested a lot of from our garden already we had an abundance of fresh vegetables to use for this, which was great, because I forgot to pick up chicken last week and need something to fill us up after a busy day.

This is super easy to make, and perfect for making for busy days or even just homeschool days.

What you need:

  • 3 chicken breast – whole or cut into bite sized pieces
  • 5 potatoes
  • 5 carrots
  • 2 cups water
  • 2 tsp chicken bouillon
  • salt and pepper to taste
  • 1 cup corn kernels
  • 1 cup green beans – halved
  • 2 tbsp butter
  • 4 tbsp flour

How to make Slow Cooker Chicken Stew:

Toss some chicken breasts, diced potatoes, and diced carrots into your slow cooker. Add chicken bouillon and water, salt and pepper to taste.

Set your slow cooker to low for 6 hours or high for 3.

An hour before serving add in green beans, and corn. You don’t want them to get mushy by being in your crock pot all day. If you are only cooking it for the 3 hours, throw them in at the beginning too.

Mix together melted butter and flour, over heat or not, and slowly mix into your slow cooker about 20 minutes before serving.

This chicken stew is delicious, filling and warm in your belly. Add some fresh rolls to make it even better.

Easy BBQ Shepard’s Pie

BBQ Shepard’s Pie is a favorite meal for my kids and I. Hubby, not so much. So this is something special just for my kids and I, and they alone can clean the casserole dish full. It’s not a horribly hard dish to make, just a little bit of time. This tends to be more of a supper than a lunch.

What you need:

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1/2 a medium onion, diced
  • 1 cup BBQ sauce
  • Cheese *optional

How to make BBQ Shepard’s Pie

As I said, this is super simple to make, maybe even easier to make than some other Shepard’s Pie recipes that are out there.

Boil potatoes, whether with skins on or off, that is up to you.

Brown your ground beef with some thinly diced onion.

Once your grown beef is cooked, drain off any fat. Return to the frying pan, return to low heat and add about a cup of BBQ sauce. Allow it to simmer.

Once potatoes are cooked through, drain off the water and mash! I use a bit of butter in my mashed potatoes to add some flavor and to make for easier mashing.

Add your ground beef into a casserole dish, leveling it out and covering the bottom, top with mashed potatoes making sure to cover all the ground beef bottom.

BBQ Shepard's Pie

We like to sprinkle a little Parmesan cheese, a little cheddar cheese and some bacon bites over the top… but that’s just us. You don’t have too, but it definitely doesn’t hurt.

Broil until the cheese melt and the potato goes golden. I use low to avoid burning.

We make our own BBQ sauce for the most part, though when we do buy them we tend to look for more smokey flavored sauces. You can find one recipe we use here, with our pulled BBQ chicken sandwiches.

Total Time: 25 minutes

A fun, smokey twist on a classic meal.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1/2 a medium onion, diced
  • 1 cup BBQ sauce
  • Cheese *optional

Instructions

  3. Once potatoes are cooked, drain and mash.
  4. Drain fat from ground beef. Return to the frying pan, return to low heat and add about a cup of BBQ sauce. Simmer.
  5. Put in the bottom of your casserole dish.
  6. Top ground beef with potatoes making sure to cover all the ground beef bottom.
  7. sprinkle a little Parmesan cheese, a little cheddar cheese and some bacon bites over the top
