Cajun Spiced Pork Chops

by Ashley Mullen Leave a Comment

Pork chops are not usually something I make. I tend to leave it to my husband to make them but when he’s away, someone needs to feed the kids, right? These Cajun spiced pork chops were so easy, and so quick to make that I have to share them with you.

Not everyone wants to spend all afternoon cooking no matter how much time you might have for cooking, I know I don’t. We have probably been spending way too much time watching TV and movies, but we have been doing to together and watching some educational programs. It’s all about balance.

Ingredients you need:

  • salt and pepper
  • garlic powder
  • onion powder
  • paprika
  • oregano
  • thyme
  • crushed red pepper flakes – optional but amazing
  • olive oil
  • boneless pork chops

What you need to do:

Mix together the dry ingredients. Once mix together, pour them onto a plate so you can easily coat both sides of your pork chops in the seasoning.

On medium heat, heat your olive oil in a stainless steel pan. Once the oil is hot, add your pork chops. I only turned my pork chops once while cooking because I wanted that nice crisp coating.

(This is the stainless steel set of pots and pans that we have. I wish we had bought them years before because there is nothing like them. They come clean like a dream with Bar Keepers Friend.)

The length of time it takes to cook your pork chops will depend on how thick your pork chops are, but for me it took about 4 minutes per side. I took them off when they reached a temperature of 145.

I served our Cajun spiced pork chops with a side of potato salad because I am needing Spring, and salads, and BBQs. While most of us love potato salad here, but a certain wild child doesn’t like eggs and won’t eat potato salad, so she had a side of white rice.

Skillet Mac and Beef – Ready in Under 30 Minutes

by Ashley Mullen Leave a Comment

I am always on the search for ground beef recipes, something simple, something quick. I have tried a lot of different recipes, but they usually fall short in some way or another. Unlike my Korean beef, a big winner around here, as well as my Seven Layer Dinner. This skillet mac and beef did not disappoint. Now I have a new recipe to add the ground beef rotation.

As a bonus, this skillet can be ready in 30 minutes, making it perfect for busy nights when you’re rushing to get supper on the table.

Tasty, filling, and, the mommy in me is happy that there are vegetables, and you could easily add more variety. It is really simple. I can’t say that enough here, it’s a rather important point for me.

What you need:

  • 1 pound ground beef
  • 1 medium onion, chopped (about 1/2 cup)
  • 1 can cream of soup or alternate soup mix
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 8 ounces about 2 cups rotini (spiral) pasta, cooked and drained

How to make Skillet Mac & Beef

Simply boil your pasta. Brown (cook) your ground beef, with your choice of vegetables. I used diced onion, minced garlic, and mixed bell peppers.

Later I thought about maybe adding some diced carrots, perhaps some corn, basically I think you could add most vegetables to this recipe.

Once the ground beef is cooked through, drained the fat of it. Add the pasta, cream of soup, Worcestershire sauce, and ketchup to the pan.

I use a cream of soup alternative instead of a can of soup mix. Using this I never run out of it, and don’t have to worry about buying more all the time.

Now, that you have everything in your skillet, mix it together and heat through. Then serve.

Every one of us enjoyed this. The flavors were great.

We have switched to using stainless steel pots and pans. After a short adjustment period, we love them and can’t believe we put off buying these for so long.

This is the exact set we bought, and love. Though at some point I would like to buy a larger pan, just because our family is growing up and those kids are eating so much more! But seriously, a great set, we use Barkeepers Friend to keep them looking great, and it take care of anything that gets stuck on.
