Peanut Butter

No Bake Oatmeal Peanut Butter Cookies

As we get more warm days, we stop using our oven as often, but that doesn’t mean that we stop wanting sweet treats. It just means that we want no bake oatmeal peanut butter cookies instead. Or Poop Cookies – another no bake cookie recipe that we love, it has coconut and we’re big fans of it here.

No bake cookies are great for hot summer days, you don’t have to have your oven warming up your house even more.

No Bake Oatmeal Peanut Butter Cookies

What you need:

  • 3 cups oats
  • ½ cup butter
  • ½ cup milk
  • 2 cups sugar
  • ½ cup peanut butter
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla

How to make No Bake Oatmeal Peanut Butter Cookies

Line a couple cookie sheets with parchment paper and set them aside.

This are perfect cookies for having some help to make. I had three handy helpers in my kitchen helping. Yes, we have watched a lot of Mickey Mouse Clubhouse in case you recognized that reference. They are able to do everything here, the only spot you might want to help with is when you bring the ingredients to a boil over medium-high heat.

The best part of this recipe, I think, is that you throw a bunch of the ingredients into a large pot to bring to a boil. Into the pot you put the butter, cocoa, sugar, and milk. Once you see some bubbles coming to the surface, count to 30, and the remove from heat.

After you remove it from the hot burner, add in your remaining ingredients – the oats, vanilla, and peanut butter. I recommend starting with the peanut butter to have it melt in before adding in your oats.

Scoop them out onto your parchment lined cookies sheets. I make cookies BIG, that way we are coming back for more as often. Saves calories burned! HAHA!

Put them in your fridge for at least 30 minutes to set. And then enjoy your no bake oatmeal peanut butter cookies that will be great for a hot summer day.

Yield: 22
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 3 cups oats
  • ½ cup butter
  • ½ cup milk
  • 2 cups sugar
  • ½ cup peanut butter
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla

Instructions

  1. Measure oats into a large bowl and set aside.
  2. In a large skillet, combine butter, milk, sugar, peanut butter, and cocoa.
  3. Stir together over medium heat (no higher) until fully combined. Don't quit stirring.
  4. Once it is boiling while you stir (not just small bubbles around the edge, but a rolling boil) set the timer for 4 minutes.
  5. Continue stirring constantly making sure to scrap the sides of the pan as needed.
  6. When the timer goes off, turn off the heat and add vanilla. This will cause the mixture to bubble up. Stir.
  7. Add the oats and mix until completely covered. Try to work fast as the start to harden as they cool.
  8. Scoop onto wax paper, using a greased cookie scoop if you have one.
  9. Let fully cool, about 20 minutes.

Chocolate & Peanut Butter Banana Bread

When you want chocolate, and your kids want banana bread, and your husband is the only one that has any motivation to make something. That is when you get chocolate and peanut butter banana bread. I mean, adding banana to a recipe helps me feel a little better when I’m eat chocolate chip cookies or chocolate chip muffins.

Peanut butter is like life around. We go through a lot of it. We all love peanut butter on toast, pb&j sandwiches, and peanut butter baked goods. This is one of the baked goods that we love, especially as it includes chocolate too.

The only way we can make banana bread in our house is to hide the bananas from our kids. The most effective way to do that, is to freeze them. When it came time to use them, we took them out to let them thaw, and then our kids took turns mashing them.

Making Chocolate & Peanut Butter Banana Bread

What you need:

  • 2 bananas mashed
  • 1 egg
  • 1/4 cup milk
  • 1.5 cup flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup + 1/4 cup chocolate granola
  • 1/2 cup peanut butter

What you need to do:

Mix together your dry ingredients in a large bowl, adding your wet ingredients, leaving the peanut butter to last. You are going to just mix in the peanut butter.

Spread the batter into a greased loaf pan. Top with 1/4 cup of granola before baking.

Bake 35-40 minutes  at 350 or until inserted toothpick comes clean.

  • 2 bananas, mashed
  • 1 egg
  • 1/4 cup milk
  • 1.5 Cup flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup + 1/4 cup chocolate granola
  • 1/2 cup peanut butter

Instructions

  1. Combine bananas, egg and milk. In separate bowl, sift flours, cocoa and baking powder. Add dry ingredients to wet and combine thoroughly. Stir in 1/2 cup granola to batter. Stir in peanut butter (I just barely stirred through, so part was incorporated, leaving peanut butter ribbons). Pour into prepared loaf pan (spray or parchment). Top with 1/4 cup granola.
  2. Bake 35-40 minutes (350) or until inserted toothpick comes clean.

Chocolate Granola Squares

That sweet tooth that needs to be satisfied, but there isn’t much in the cupboard, and certainly nothing that you actually want to eat. Do you know that feeling? That feeling is what lead us to these granola squares, chocolate granola squares that is. This are amazing, right up there with some of my favorite brownie recipes, only these are easier to make.

We had chocolate chips, thank you Costco, these huge bags are great. We also had a bag of granola thanks to Kellogg’s – we used Dark Chocolate Coconut nourish granola. Due to my darling daughter having a similar addiction I did as a child (teen, and adult) to peanut butter we also had that. Three ingredients is all this recipe takes. It’s not often I write that.

What you need:

  • 1.5 cup Chocolate chips, melted
  • 1/2 cup peanut butter
  • 2 cups granola – we used Kellogg’s Dark Chocolate Coconut nourish granola

How to make Chocolate Granola Squares:

You’re first step is to cover a square 8X8 pan with wax paper, make sure it is completely covered, over hanging a bit so you can lift the squares out later.

Now melt half your chocolate chips and spread over the bottom of your pan. Refrigerate until set.

Meanwhile, in a medium bowl, combine the peanut butter, granola and stir until smooth. Scrape the mixture into the pan and flatten to an even layer.

Spread the remaining (melted) chocolate chips on top and refrigerate until set. Unmold and cut into bars.

I dare you to try and let this just sit in your fridge. If you can though, they are good for about a week there. But there is no way they they are going to last that long… trust me, these chocolate granola squares are going to be calling your name.

Total Time: 40 minutes

Ingredients

  • 1.5 Cup Chocolate chips melted
  • 1/2 cup peanut butter

Instructions

  1. Line an 8-inch square baking pan with wax paper so that there is overhang on 2 sides. Spread half of the melted chocolate chips in the pan and refrigerate just until set.
  2. Meanwhile, in a medium bowl, combine the peanut butter, granola and stir until smooth. Scrape the mixture into the pan and flatten to an even layer. Spread the remaining melted chocolate chips on top and refrigerate until set. Unmold and cut into bars.

Chocolate Coffee Cake with Peanut Butter Frosting

I’m a chocolate lover, a peanut butter lover, put the two together in a cake and I’m mush. This chocolate coffee cake with peanut butter frosting is the undoing of all my hard work walking and watching what I eat. Just like the chocolate liquor cake he made recently, thank you honey,  just what I needed!

Chocolate Coffee Cake with Peanut Butter Frosting

I have could lick the frosting off the cake and be done. Our oldest, Austin, loves this chocolate cake… or the frosting in particular. Any time she sees her father in the kitchen going to bake something she begs for it. She has also now asked for this cake and the frosting for her birthday cake.

What you need:

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups sugar
  • 3/4 cups cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup buttermilk shaken and at room temperature
  • 1/2 cup vegetable oil
  • 2 extra-large eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup freshly brewed hot coffee or 2/3 cup coffee mixed with 1/3 cup of water

For the Frosting:

  • 2 sticks 1 cup unsalted butter, softened
  • 1 cup smooth peanut butter
  • 1 1/2 cup confectioners’ sugar
  • 1/4 tsp salt
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons heavy cream or milk

How to make Chocolate Coffee Cake with Peanut Butter Frosting:

Grab your non-stick spray and grease two round pans, ours are nine inch pans.

Start adding ingredients into your mixer as per the cake recipe, mixing well, you don’t want to have flour lumps in your cake, nothing like that to turn you off your cake. Divide it evenly into the two round pans for baking.

Bake for 35-40 minutes, until a toothpick comes out clean – my method for cake done-ness testing.

Let it cool for about 30 minutes, or set in the fridge/freezer for 10 minutes to speed up the cooling process if you can’t wait that long. While you are waiting for your cake to cool get making your peanut butter frosting.

Try to not eat the frosting straight from the bowl, leave some for the cake!

Spread some in the middle, some on the sides, and a lot on the top.

We still had some chocolate cookie crumbs from Gauge’s birthday cake that we sprinkle it over the top for a little extra.

Chocolate Coffee Cake with Peanut Butter Frosting

Prep Time: 15 minutes
Cook Time: 35 minutes
Inactive Time: 30 minutes
Total Time: 1 hour 20 minutes

This cake recipe will leave no one unhappy. Easy to make, with big flavor.

Ingredients

For the Cake

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup buttermilk, shaken and at room temperature
  • 1/2 cup vegetable oil
  • 2 extra-large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup freshly brewed hot coffee, or 2/3 cup coffee mixed with 1/3 cup of water

For the Frosting

  1. Preheat the oven to 350. Grease two 8-inch x 2-inch round cake pans.
  2. Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
  3. Mix together the buttermilk, oil, eggs, and vanilla.
  4. With the mixer on low speed, slowly add the wet ingredients to the dry and mix until just incorporated, scraping down the sides of the bowl as needed.
  5. Add the coffee and stir just to combine. Give a final stir with a rubber spatula to make sure the bottom and sides are fully incorporated.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 35 to 40 minutes, until a toothpick comes out clean.
  8. Cool in the pans for 30 minutes, then turn them out onto a cooling rack to cool completely.

For the Frosting

  1. Add the butter and peanut butter to the bowl of a stand mixer fitted with the whisk attachment. Whisk at medium-high speed until smooth, about 20 seconds.
  2. Add confectioners' sugar and salt and beat until mixed.
  3. Add the vanilla and cream and beat at medium speed until mixed.
  4. Increase speed to medium-high and beat until light and fluffy, about 4 minutes, scraping down the bowl a few times during mixing.
  5. Place 1 layer of the cake on a flat plate or cake stand. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, and spread the frosting evenly on the top and sides of the cake. Garnish with cookies crumbs as desired.

Peanut Butter Mini Donuts

There is nothing quite like breakfast that should be dessert, and that’s what these are, or at least that is what we did. A special breakfast now and then is just what we all need. These simple peanut butter mini donuts are simple to make, and when dipped in a little jam, or maybe a little Nutella, are that much more delicious.

The first thing I have to say about making these peanut butter mini donuts is that if you are making them for more than two people, or even just for two people, you are going to want to double this recipe. My three kids devoured these and were looking for more! I had a small bite of one of one and that was it, they took the rest, and that little bite was not enough.

Let’s make simple mini donuts with our mini donut maker.

What you need:

  • 1/4 cup peanut butter
  • 1/4 cup sugar
  • 1/3 cup + 1 tbsp milk
  • 1 tbsp vegetable oil
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt

How to make Peanut Butter Mini Donuts:

Cream together the peanut butter, sugar, and egg. Slowly mix in the remaining ingredients one at a time.

Nice a small. The original cut, too big of a hole, was mistake number one. Mistake number two was using cheap Ziploc bags, I have since been buying only Ziploc bags, there are times when cheaper prices mean cheaper product and just aren’t worth the trouble.

It lead to a blow out the side. I simply dropped this bag into a better brand baggie and continued on my way. Lesson learned, lesson shared!

See how nicely it fits into the mold when the end is cut, and not too big. My mini donut maker has two lights on the top, one for when it is heated and ready to go, the other for when the donuts should be cooked.

Not all doughnut makers are the same, read your instruction manual to see how yours works. That leads to pretty, tasty mini donuts.

Peanut Butter Mini Donuts

Yield: 15
Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Make these easy mini donuts in your mini donut maker easily. They a tasty and delicious dipped in jam.

Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup sugar
  • 1/3 cup + 1 tbsp milk
  • 1 tbsp vegetable oil
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Cream together peanut butter, sugar and egg.
  2. Mix in the rest of the ingredients, until mixed well.
  3. Pour batter into a Ziploc bag to make for easier filling of your mini donut maker.
  4. Cook according to the instructions of your mini donut maker. For instance, mine has a green light that comes on when the donuts should be finished.
