Peanut Butter Chocolate Chip Cookies

Baking has become a fun way to spend time some one on one time with each of our kids, but my oldest has gotten to the point where she doesn’t need help anymore and these cookies she made were delicious! She did a great job with no help from anyone. I love her independence in the kitchen and the delicious treats we all get to enjoy from it. These peanut butter chocolate chip cookies came out looking amazing, but they that tasted even better!

Peanut Butter Chocolate Chip Cookies

What you need:

  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1 cup margarine softened
  • 1/2 c creamy peanut butter
  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/2 c chocolate chips

How to make Peanut Butter Chocolate Chip Cookies:

This recipe is simple enough. Mix all the ingredients together, leaving the chocolate chips for last. Then scoop your cookie dough onto either a greased cookie sheet, or a cookie sheet lined with parchment paper, and bake.

Simple enough that my nine year old made them without help. There aren’t too many life skills that are as important as knowing how to cook, says a Momma who has to look up how to boil an egg when she makes potato salad. BUT in my defense, no one here eat boiled eggs so it’s not something I need to know how to do at the drop of a hat.

Getting our kids in the kitchen is one of our most favorite ways to spend some one on one time with them. My youngest, at almost 5, wants to be a taste tester and a chef when he grows up. And a superhero.

My kid knows her way around the kitchen, and knows to set the time for her cookies. Don’t they look delicious?!

Peanut Butter Chocolate Chip Cookies

Peanut Butter Chocolate Chip Cookies

Yield: 30
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1 cup margarine, softened
  • 1/2 c creamy peanut butter
  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/2 c chocolate chips

Instructions

  1. Preheat oven to 375
  2. Mix margarine, sugar and egg.
  3. Add in remain ingredients, leaving the chocolate chips for last.
  4. Drop spoon fulls onto a cookie sheet lined with parchment paper or a silicone sheet.
  5. Bake for 8-10 minutes, until the edges are golden.

Peanut Butter Cup Baked Oatmeal Bowls

My kitchen smells amazing right now! I wish we could do a little scratch and sniff so you could smell it but I guess you’ll just have to take my word for it, and maybe go make yourself some of these peanut butter cup baked oatmeal bowls. Baked oatmeal has become a weekly thing here since school started. It’s something different to have for breakfast, and a little more healthier than some options.

These are simple enough to make, enough so that you make make them quickly in the morning before your kids get up in the morning, or in the evening before bed to be ready first thing in the morning. They took me about 5 minutes to throw together. And that’s all you do to make these, throw all the ingredients into a bowl, mix and then divide into your ramekins.

What you need:

  • 2 c instant oats
  • 1 tsp vanilla
  • 1/2 c unsweetened apple sauce
  • 1/2 c milk
  • 1/4 c honey
  • 1/4 tsp salt
  • 4 tbsp cocoa
  • 1/3 c peanut butter

What you do to make Peanut Butter Cup Baked Oatmeal Bowls:

  1. Mix everything together in a bowl.
  2. Divide between 4 ramekins.
  3. Bake at 380 for 20 minutes.
  4. Optional: add spoonful of peanut butter to the top once cooled.

I got 4 of these out of this recipe which was just what we needed. They are super filling! And tasty of course. Bake at 380. Once mine cooled down, I dropped a spoon full of peanut butter on the top. Just a little, and it only melted a little. Perfection.

And the perfect way to get your child who claims she hates oatmeal to eat a filling breakfast before starting school. Momma knows how to work these kids yet.

Total Time: 25 minutes

Single serve oatmeal breakfast bowls.

Chocolate Peanut Butter Oatmeal Cups

Back to school here has had me making breakfast once a week for my kiddos, something different than the normal toast. These Chocolate Peanut Butter Oatmeal Cups are perfect for making ahead of time and for on the go. We are loving oatmeal (baked) for breakfast lately. Something different to get our day started.

These are great for making ahead for a busy week of running your kids around and homeschooling. They are simple make, and store well in a container for grabbing on the go or for when you’re just sitting down to do something (lessons, work from home, etc) and your kids start asking for second breakfast.

You can either use muffin liners, I love these silicone muffin liners, or grease your muffin tins. I used a 1/4 cup to fill my muffin tins, these don’t rise so you can fill the cups up without fear of them pilling over.

What you need:

  • 4 cups quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup mini semisweet chocolate chip
  • 3 tablespoons peanut butter
  • 2 cups milk
  • 1 egg
  • 1 tablespoon sugar

How to Make Peanut Butter Oatmeal Chocolate Chip Muffins:

Simply throw all of the following ingredients in a bowl and mix well to get your peanut butter oatmeal chocolate chip muffins for breakfast tomorrow.

Bake in preheated oven at 375 for 30 minutes.

You could easily substitute out the chocolate chips for raisins for a more healthy version of these. Or do a mixture of both. Maybe add some nuts or other dried fruit.

This recipe is super super easy. It could be the perfect recipe for having your kids make. If you haven’t started baking with your kids this is a great way to start.

They can learn so much cooking and baking. Math and language arts galore, as well as science, because it’s all about chemical reactions.

An easy to make ahead of time breakfast muffin.

Ingredients

  • 4 cups quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup mini semisweet chocolate chip
  • 3 tablespoons peanut butter
  • 2 cups milk
  • 1 egg
  • 1 tablespoon sugar

Instructions

  1. Simply throw all the ingredients into a bowl and mix.
  2. Either use muffin liner or grease your muffin tin. I used a 1/4 cup to fill my muffin tins, they didn't rise so fill them up.
  3. Bake in preheated oven at 375 for 30 minutes.

Chocolate Chip Peanut Butter Cookies

I love peanut butter cookies,  throwing in a cup of chocolate chip seemed like a good ideas. I can’t make cookies very well, because I always forget that they are going to continue to cook for a few minutes after they come out of the oven. This usually equals burnt cookies. But these ones, while a little crispy around the edges, they were delicious!

These are delicious cookies… easy to make too if I can make them, and if you actually know how to use a timer (unlike me, I forget to set it), and you can tell when cookies need to come out of the oven, you’re set!

What you need:

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 1 cup butter softened
  • 2 eggs
  • 2 tsp vanilla
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 cup flour
  • 2 cup chocolate chips

How to make Chocolate Chip Peanut Butter Cookies:

Mix together the eggs and butter until fluffy. Add in your sugars and mix well. Add in the rest of the ingredients – minus the chocolate chips and mix.

Fold in your chocolate chip, my recipe calls for 2 cups, but next time I’ll go with less because I love peanut butter cookies so much.

Now you can use a mixer for this… my mixer bowl was in the dishwasher. My dishwasher is not reliable lately, so I just did this by hand.

I like big cookies, I placed just 6 per cookie sheet to avoid them spreading together.

Bake cookies in a preheated oven at 375 for 8 minutes. Longer than 8 minutes and my cookies were well done. Less done, and they were a bit more chewy.

Peanut Butter Chocolate Chip Muffins

Peanut butter is in daily use in this house. In fact, a few weeks ago we ran out, I ran to the store but only bought the store brand peanut butter. Well. That was a mistake, because there is a flavor difference, but its great for baking. And baking we’ve been, like this peanut butter chocolate chip muffins.

These are a kid pleaser! And some days I just want to be the”perfect mom” and please my kids. Especially on those days when I’m not sure if they are going to like supper or not or maybe I have been a bit cranky.  These are simple to make, there aren’t a lot of ingredients required. They are perfect making with kids.

What you need:

  • 2 Cups Flour
  • 1 tbsp. Baking Powder
  • 1½ tsp. Salt
  • 1¼ cups Jif Creamy Peanut Butter
  • 1.5 cups Nestle Mini Semi-Sweet Chocolate Chips
  • 1 cup Milk
  • ⅔ cup Sugar
  • ⅓ cup Canola Oil
  • 2 Eggs
  • 1 tsp. Vanilla

How to make Peanut Butter Chocolate Chip Muffins:

Beat together the egg and sugar. Mix in the oil, the vanilla, the salt, and peanut butter. Then mix in the flour and milk. Fold in the chocolate chips if you want to use them. I think that they are just as great without the chocolate chips.

Scoop about 1/4 of a cup of batter into each muffin tin. Bake at 350 for 18 minutes. 15 minutes was not done, but 18 minutes in my oven was perfect. Make sure to check yours though, your oven may bake faster than mine.

These muffins would be just as good without the chocolate chips. Actually, I think they would be even better, but my kids do not agree.

Total Time: 23 minutes

Ingredients

  • 2 Cups Flour
  • 1 tbsp. Baking Powder
  • 1½ tsp. Salt
  • 1¼ cups Jif Creamy Peanut Butter
  • 1.5 cups Nestle Mini Semi-Sweet Chocolate Chips
  • 1 cup Milk
  • ⅔ cup Sugar
  • ⅓ cup Canola Oil
  • 2 Eggs
  • 1 tsp. Vanilla

Instructions

  1. Preheat oven to 375 degrees.
  2. Stir the flour, salt and baking powder in a large bowl.
  3. Add the milk, eggs, sugar, peanut butter, chocolate chips, vanilla, and oil… and mix until moistened.
  4. Fill up muffin liners in muffin pan ¾ full – almost full.
  5. Sprinkle the top of each muffin with a smidge more sugar. {yum!}
  6. Bake at for approx. 18 minutes, or until done. ENJOY!
