Peanut Butter Mini Donuts

There is nothing quite like breakfast that should be dessert, and that’s what these are, or at least that is what we did. A special breakfast now and then is just what we all need. These simple peanut butter mini donuts are simple to make, and when dipped in a little jam, or maybe a little Nutella, are that much more delicious.

The first thing I have to say about making these peanut butter mini donuts is that if you are making them for more than two people, or even just for two people, you are going to want to double this recipe. My three kids devoured these and were looking for more! I had a small bite of one of one and that was it, they took the rest, and that little bite was not enough.

Let’s make simple mini donuts with our mini donut maker.

What you need:

  • 1/4 cup peanut butter
  • 1/4 cup sugar
  • 1/3 cup + 1 tbsp milk
  • 1 tbsp vegetable oil
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt

How to make Peanut Butter Mini Donuts:

Cream together the peanut butter, sugar, and egg. Slowly mix in the remaining ingredients one at a time.

Nice a small. The original cut, too big of a hole, was mistake number one. Mistake number two was using cheap Ziploc bags, I have since been buying only Ziploc bags, there are times when cheaper prices mean cheaper product and just aren’t worth the trouble.

It lead to a blow out the side. I simply dropped this bag into a better brand baggie and continued on my way. Lesson learned, lesson shared!

See how nicely it fits into the mold when the end is cut, and not too big. My mini donut maker has two lights on the top, one for when it is heated and ready to go, the other for when the donuts should be cooked.

Not all doughnut makers are the same, read your instruction manual to see how yours works. That leads to pretty, tasty mini donuts.

Peanut Butter Mini Donuts

Yield: 15
Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Make these easy mini donuts in your mini donut maker easily. They a tasty and delicious dipped in jam.

Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup sugar
  • 1/3 cup + 1 tbsp milk
  • 1 tbsp vegetable oil
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Cream together peanut butter, sugar and egg.
  2. Mix in the rest of the ingredients, until mixed well.
  3. Pour batter into a Ziploc bag to make for easier filling of your mini donut maker.
  4. Cook according to the instructions of your mini donut maker. For instance, mine has a green light that comes on when the donuts should be finished.

Peanut Butter and Jam Muffins

Sometimes you just need something on the go for your kids that isn’t a sandwich. If you’re anything like our family you maybe ran out of bread, I can’t keep it in our house! Or maybe you just love peanut butter and jam as much as we do and love finding new ways to mix them up!

Peanut Butter and Jam Muffins - Not Your typical PB&J!

You can also make some peanut butter and jam roll ups, or peanut butter and jam bars. You can also find a lot more similar recipes in my Recipe Box (in the menu bar). I have made these muffins, many many times. We take them to dance, where we end up eating supper once a week. These are easy, portable and taste much better than an old PB&J sandwich.

Peanut Butter and Jam Muffins

What you need:

  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 cup sugar
  • 1 cup creamy peanut butter
  • 2 eggs
  • 1 cup skim milk
  • 1 tbsp vanilla
  • 1/4 cup vegetable oil
  • 1/2 cup jam or nutella

What you do to make Peanut Butter and Jam Muffins:

  • Start by mixing together the eggs, sugar, and oil.
  • Add in your peanut butter here to have it mixed in well.
  • Add in the baking powder and vanilla.
  • Alternating between the flour and milk, add in them in, mixing well.
  • Using a greased muffin pan, scoop batter into each cup, filling 3/4 full.
  • Taking about a tablespoon of jam and pat it into the base. It will go smoothly, these really are easy, in reality you could just put the jam on top, but it will make the next step a bit trickier.
  • Top your muffins with the rest of the peanut butter mix. Covering the jam completely.
  • Bake for 18 minutes.

I don’t make this often but they are a delicious treat when I do make them. I like to make them when we are going to have a trying, busy day. Whether it’s when we are going to be spending the day running errands, or grocery shopping in the city. They make a great snack/lunch on the go.

Cook Time: 18 minutes
Total Time: 28 minutes

Ingredients

  • 1 cup skim milk

  2. Start by mixing together the eggs, sugar, and oil.
  3. Add in the baking powder and vanilla.
  4. Mix peanut butter in really well.
  5. Alternating between the two, add in the flour and milk, mixing well.

Peanut Butter and Jam Bars

Peanut Butter and Jam Bars, everything a BP & J sandwich has, plus you know a bit extra sugar, and we could all stand to be a little sweeter I’m sure. We all love these, Hubby included. You probably won’t want to make these all that often or eat too much of it. But boy oh boy are they good.

We are big peanut butter fans here, and my kids want nothing but the brand name peanut butter here. And they get that from me. Opps. But I do buy the store brand peanut butter for baking because once you add in other stuff, you don’t even notice. But you, do you.

These are a fun dessert take on the tradition peanut butter and jam sandwich that I honestly forgot how easy they are to make.

What you need:

  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 1/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 tsp baking powder
  • 2 cup flour
  • 1 1/4 cup peanut butter
  • 3/4 cup jam of your flavor choice

How to Make Peanut Butter and Jam Bars

Start by mixing together the eggs, brown sugar and butter. Add in the baking powder, vanilla, flour and then the peanut butter, we buy Kraft 25% less fat smooth, it’s become the only stuff my daughter calls good, and she is a peanut butter lover just like her Momma.

You are basically just working your way down the recipe, mixing as you go. Don’t over mix the flour and peanut butter in.

Press 3/4 of the peanut butter mixture into the bottom of a 9 x 9 pan. I left the edges a bit higher so the jam doesn’t run off and stick to the sides. This makes it easier to clean the pan and cut the pieces.

Spread jam over the peanut butter layer, or you could do a layer of chocolate or hazelnut spread.

The remaining peanut butter becomes a crumbled layer over the top. I use my hands to do this part, the dough is like a cookie dough so that you can handle it without making a mess.

Bake for 30 minutes at 350. Make sure to allow it to cool before you try to cut it. Ours always end up in the freezer trying to get them to cool faster.

I have also made these with Chocolate Hazelnut spread. It is so freaking good too!

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

This is a peanut butter and jam sandwich that has been made into a dessert. Peanut butter and jam bars.

Ingredients

  • 1/2 cup butter
  • 2 eggs
  • 1 1/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 tsp baking powder
  • 2 cup flour
  • 1 1/4 cup peanut butter
  • 3/4 cup jam of your flavor choice

Instructions

  1. Mix together working your way down the ingredient list minus - the jam. Don't over mix the flour and peanut butter in.
  2. Spread jam 3/4 of the mix into a greased 9X9 square pan.
  3. Spread jam over the mix.
  4. Crumble the remain peanut butter mixture over top.
  5. Bake in a preheated oven (350 degrees) for 30 minutes.

Cutting the Sweetness

You could also use a sugar-free jam to help cut some sweetness, which is what I do usually use, but at this time when photographing, I didn’t have it.

You could cut back some of the brown sugar but I have not done that so I do not know how it will be in the end.

I have not used natural peanut butter so I don’t know how it would affect the overall texture and taste. But you are welcome to try it and let me know how it works for you.

Peanut Butter and Jam Rolls

Have you ever noticed that as soon as you start a diet or start eating healthier all the amazing recipes you find or start popping in to your head? I want to eat healthier, less junk less eating because I’m bored, fun times in our house right now. But then I like to have fun things for my kids to have for lunch, like these Peanut Butter and Jam Rolls.

 Sorry, I couldn’t help it. I hope it isn’t stuck in your head too now… okay so maybe I’m hoping your singing it too. Here is a link to all the words.

Most days I have 5 kids for lunch. Picky eaters at that. They love KD, PB&J sandwiches and Alphagetti. Boring. Yesterday I put a new spin on PB&J’s.

What you need to make the dough for this recipe:

  • 2 cups of flour
  • 1 1/2 tsp of yeast
  • 2 tbsp of sugar
  • 2 tbsp melted butter
  • 3/4 cup of warm water

How to make the dough for Peanut Butter and Jam Rolls:

  1. Add the yeast to the water, let it sit for a minute before adding and mixing the remaining ingredients together.
  2. Let it rise, covered with a towel, in a warm spot for an hour.

How to make Peanut Butter and Jam Rolls:

  1. Divide it into how ever many pieces you wish.
  2. Roll your pieces out into thin rectangles.
  3. Cut slits into the bottom half.
  4. Put about 1/2- 1 tbsp of peanut butter and jam on it, or Nutella or any other topping of your choice.
  5. Roll it up, starting at the top. I place my seam side down on a grease cookie sheet.

6. Let them rise for another 45 minutes to an hour. Bake at 400 for 10-15 minutes.

7. At ten minutes I brushed some butter over them to brown them up.

Cook Time: 10 minutes
Total Time: 1 hour 55 minutes

These Peanut Butter and Jam Rolls are fun lunch to make once in awhile for your kids.

Ingredients

These were really good. The kids ate them faster than I could serve it. They were relative easy, just make sure to start early enough for to let them rise.
