Happy Thursday! Today is a school day. Mornings that there is school, are crazy busy. The girls get up at 7 and we have to be getting in the vehicle by 8. I get up really early on school mornings. If I don’t wake up completely before I start rushing the kids along. So while I wait for them to wake up:
As you may have seen here and there, we are moving, again. We were extremely to find this place, the price for the house (rental). Everything else is out of the world expensive. Plus we want to get all credit and loan debit paid off by spring. This has lead me to once again try meal planning and therefore saving money. Normally, for me, it has lasted one maybe two days then I’m off track and give up.
Not this time. I am determined to make it work and save money doing it. No more running to the store because I don’t feel like cooking or don’t know what to make. There
are were eight meals in my freezer just waiting to go into the slow cooker.

Fall is officially here. Mother Nature is very confused but fall is here.
A few weeks ago it was cold, it felt like fall, I had even dug out the kids mittens for school drop off. We passed by the frost warnings and had frost, and lost some plants to it.
Now that fall has officially arrived, we’re back to the hot summer temperatures. Today it is calling for a high of 32°C. Hot day!
My poor plants are in shock. Some are doing great, some are dead, and some a dying for the winter.
I am smiling. I am proud. I am a mother.
Hubby and I watched just the other day as Austin taught her little sister how to zipper up her jacket all by herself. I am so proud of what an amazing big sister she is. She loves her little sister and brother.
The fighting between those girls could drive me crazy, almost all day, any day – usually starting when Brookland wakes her sister up in the morning.
But in the end, they are sisters who love each other.
At Brookland’s two month needles, down the hall through a closed door Austin heard her little sister cry and wanted to go to her to make her happy again. I love food that is
kinda healthy but looks completely bad for you. Because brownies or bars are bad for you. But Peanut Butter and Jam Bars are sorta good for you, everything a BP & J sandwich has, plus you know a bit extra sugar, and we could all stand to be a little sweeter. 😉 We all love these, Hubby included. You probably won’t want to make these all that often, or eat too much of it. But boy oh boy are they good.
Peanut Butter and Jam Bars

I came across a recipe similar to this a while ago. I scribbled down the recipe but never got around to making them. Recently I came across my scrap of paper, only I edited it to fit my wants for a lack of a better word, and made these just in time to have for lunch one day.
Start by mixing together the eggs, brown sugar and butter. Add in the baking powder, vanilla, flour and then the peanut butter, we buy Kraft 25% less fat smooth, it’s become the only stuff my daughter call good, and she is a peanut butter lover just like her Momma.
Press 3/4 of the peanut butter mixture into the bottom of a 9 x 9 pan. I left the edges a bit higher so the jam doesn’t run off and stick to the sides.
Spread jam over the peanut butter layer, or a layer of chocolate or hazelnut spread.
The remaining peanut butter becomes a crumbled layer over the top.
Bake, allow to cool… ours always end up in the freezer trying to get them to cool faster.
Cut, serve and enjoy.
It is 10:30 at night but I want to go into the kitchen and make this, right now.
I have also made these with No Name Chocolate Hazelnut spread. It is so much better than Nutella (which I don’t like) and cheaper too!
- 1/2 cup butter
- 2 eggs
- 1 1/4 cup brown sugar
- 1 tsp vanilla
- 3/4 tsp baking powder
- 2 cup flour
- 1 1/4 cup peanut butter
- 3/4 cup jam of your flavor choice
- Mix together working your way down the ingredient list minus - the jam.
- Spread jam 3/4 of the mix into a greased 9X9 square pan.
- Spread jam over the mix.
- Crumble the remain peanut butter mixture over top.
- Bake in a preheated oven (350 degrees) for 30 minutes.
