Apple – Peanut Butter Wraps

I was going through pictures this morning I came across the pictures for this, and couldn’t believe that I hadn’t shared this already. These apple peanut butter wraps are my girls favorite lunch. And they are perfect for Austin to take to school. Make sure to check out the other peanut butter and/or apple recipes that we have.

These wraps are super easy to make. Healthy, getting some protein, fruit and grains in. And, I find they are filling, though there is no filling my children.

What you need:

  • large tortilla
  • peanut butter
  • apple – sliced

How to make Apple – Peanut Butter Wraps

All you need is a (large) tortilla, peanut butter and an apple. Spread peanut butter over your tortilla, bringing it to the edge on one side.

Top with diced apple, with or without the skin still on. My kids know I don’t peel apples, and I rarely peel potatoes.

Now, roll it up. I tuck the ends in, then roll it up from the side. The edge/side you brought the peanut butter too, roll towards it. The peanut butter will keep it wrapped nice and tight acting like glue.

Now doesn’t that look good?! And it takes no time at all.

Hubby looks at us like we’re crazy when the girls ask for this. Apparently he doesn’t think it looks or sounds as great as it is. His loss.

My daughter’s school is NOT peanut free, in fact there is nothing that they aren’t allowed. At this time there are no allergies in her school… if there were, I would have no issues with it and she’d be taking something different to school, we are NOT going to risk anyone’s child.

UPDATE: We homeschool now so these are a staple in our house!

My Day with Three Children

I know it wasn’t that long ago that shared what my day was like and I had a number of comments on the size and “cuteness” of my dishwasher. Well ladies, I’ve since upgraded and added to our family so I thought for anyone wondering about life with three children, I’d share what a typical day is like around here.

Day’s like today where the little girl I baby-sit comes (Mon-Wed-Fri) I am up by 6:30am at the latest. Or 5am, when Gauge thinks its playtime. And then he falls back to sleep at 6:30am on the dot I swear.

The day must start with coffee.

On days when the little girl comes, I must also tackle my hair. It would really help if I didn’t go to bed with wet hair.

We moved at the end of October (2013) right before Gauge was born and into a house with a real dishwasher. I run this thing at least twice a day, more if it means I don’t have to do dishes by hand.

The source of a lot of trouble and frustration for me. Two bedrooms and our playroom are here in the basement, which as you can see we can’t use. The noise can be a pain, along with the people coming and going all day long.
Oh, my laundry is in the basement too.

If I don’t throw something into the slow cooker (because I forgot too) then Hubby and I usually make supper together.
Delicious meatballs, glazed carrots and rice.

I love seeing my three children playing together. There are two year, two months and two days between Austin and Brookland. Two years, six months between Brookland and Gauge. Always someone to play with.

Oh look, more laundry. With 5 of us, two little girls that like to change their clothes every few minutes, and a baby that spits up on himself and me, I do a lot of laundry.

And in there somewhere, a few stolen minutes at a time I try to fit in blogging and school. By far the biggest challenge has been to let somethings go. Sometimes the dishes and/or laundry at piled high, but I’ve gotten a lot of snuggles and playtime. Of course there is breakfast, baths, hair brushing battles in there too. All part of the best job I’ve ever had.

Peanut Butter and Jam Bars

Peanut Butter and Jam Bars, everything a BP & J sandwich has, plus you know a bit extra sugar, and we could all stand to be a little sweeter I’m sure. We all love these, Hubby included. You probably won’t want to make these all that often or eat too much of it. But boy oh boy are they good.

We are big peanut butter fans here, and my kids want nothing but the brand name peanut butter here. And they get that from me. Opps. But I do buy the store brand peanut butter for baking because once you add in other stuff, you don’t even notice. But you, do you.

These are a fun dessert take on the tradition peanut butter and jam sandwich that I honestly forgot how easy they are to make.

What you need:

  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 1/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 tsp baking powder
  • 2 cup flour
  • 1 1/4 cup peanut butter
  • 3/4 cup jam of your flavor choice

How to Make Peanut Butter and Jam Bars

Start by mixing together the eggs, brown sugar and butter. Add in the baking powder, vanilla, flour and then the peanut butter, we buy Kraft 25% less fat smooth, it’s become the only stuff my daughter calls good, and she is a peanut butter lover just like her Momma.

You are basically just working your way down the recipe, mixing as you go. Don’t over mix the flour and peanut butter in.

Press 3/4 of the peanut butter mixture into the bottom of a 9 x 9 pan. I left the edges a bit higher so the jam doesn’t run off and stick to the sides. This makes it easier to clean the pan and cut the pieces.

Spread jam over the peanut butter layer, or you could do a layer of chocolate or hazelnut spread.

The remaining peanut butter becomes a crumbled layer over the top. I use my hands to do this part, the dough is like a cookie dough so that you can handle it without making a mess.

Bake for 30 minutes at 350. Make sure to allow it to cool before you try to cut it. Ours always end up in the freezer trying to get them to cool faster.

I have also made these with Chocolate Hazelnut spread. It is so freaking good too!

Yield: 12
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

This is a peanut butter and jam sandwich that has been made into a dessert. Peanut butter and jam bars.

Ingredients

  • 1/2 cup butter
  • 2 eggs
  • 1 1/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 tsp baking powder
  • 2 cup flour
  • 1 1/4 cup peanut butter
  • 3/4 cup jam of your flavor choice

Instructions

  1. Mix together working your way down the ingredient list minus - the jam. Don't over mix the flour and peanut butter in.
  2. Spread jam 3/4 of the mix into a greased 9X9 square pan.
  3. Spread jam over the mix.
  4. Crumble the remain peanut butter mixture over top.
  5. Bake in a preheated oven (350 degrees) for 30 minutes.

Cutting the Sweetness

You could also use a sugar-free jam to help cut some sweetness, which is what I do usually use, but at this time when photographing, I didn’t have it.

You could cut back some of the brown sugar but I have not done that so I do not know how it will be in the end.

I have not used natural peanut butter so I don’t know how it would affect the overall texture and taste. But you are welcome to try it and let me know how it works for you.

Peanut Butter and Jam Rolls

Have you ever noticed that as soon as you start a diet or start eating healthier all the amazing recipes you find or start popping in to your head? I want to eat healthier, less junk less eating because I’m bored, fun times in our house right now. But then I like to have fun things for my kids to have for lunch, like these Peanut Butter and Jam Rolls.

 Sorry, I couldn’t help it. I hope it isn’t stuck in your head too now… okay so maybe I’m hoping your singing it too. Here is a link to all the words.

Most days I have 5 kids for lunch. Picky eaters at that. They love KD, PB&J sandwiches and Alphagetti. Boring. Yesterday I put a new spin on PB&J’s.

What you need to make the dough for this recipe:

  • 2 cups of flour
  • 1 1/2 tsp of yeast
  • 2 tbsp of sugar
  • 2 tbsp melted butter
  • 3/4 cup of warm water

How to make the dough for Peanut Butter and Jam Rolls:

  1. Add the yeast to the water, let it sit for a minute before adding and mixing the remaining ingredients together.
  2. Let it rise, covered with a towel, in a warm spot for an hour.

How to make Peanut Butter and Jam Rolls:

  1. Divide it into how ever many pieces you wish.
  2. Roll your pieces out into thin rectangles.
  3. Cut slits into the bottom half.
  4. Put about 1/2- 1 tbsp of peanut butter and jam on it, or Nutella or any other topping of your choice.
  5. Roll it up, starting at the top. I place my seam side down on a grease cookie sheet.

6. Let them rise for another 45 minutes to an hour. Bake at 400 for 10-15 minutes.

7. At ten minutes I brushed some butter over them to brown them up.

Cook Time: 10 minutes
Total Time: 1 hour 55 minutes

These Peanut Butter and Jam Rolls are fun lunch to make once in awhile for your kids.

These were really good. The kids ate them faster than I could serve it. They were relative easy, just make sure to start early enough for to let them rise.
