Chocolate Brownies

I have been making these chocolate brownies since I started baking on my own. I grabbed the recipe when I moved out on my own an still make them. I’ve never been one for buying mixes from a store or anywhere else.

The icing I use, is amazing. It is just perfect.

What you need:

For the Brownies

  • 1/2 cup butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/3 cup cocoa
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Icing

  • 3 tbsp softened butter
  • 3 tbsp cocoa
  • 1 tbsp honey
  • 1/2 – 1 tbsp warm water
  • 1 cup icing sugar

How to Make these Brownies

I made these chocolate brownies just the other day when a chocolate craving hit. I had no chocolate stashed in my house, what kind of woman with three kids doesn’t have chocolate stashed somewhere?

Probably one (like me) who has willpower issues.

Grab your mixer, use your whisk attachment, and toss in your eggs and sugar to mix for a minute. Add in your butter, mix for a minute.

Add in the remaining ingredients and, of course, mix. Pour the batter into a greased 9X9 pan. Bake at 350 for 25-30 minutes.

Do you see just how great that edge looks. That is my favorite part of the brownie, and I’m sure I’m not the only one who feels that way.

While letting your brownies cool, make up your icing. This icing is my favorite, I don’t like canned, but I suck at making my own usually. This recipe though is rather fool-proof – this fool can make it!

That is honey you see above on the cocoa, I swear that that is the reason I love this recipe.

I also have to love that I can pour this over my brownies, and it will harden a bit, it will not drip off when you’re trying to eat them.

Chocolate Brownies

Yield: 9
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

For the Brownies

  • 1/2 cup butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/3 cup cocoa
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Icing

  • 3 tbsp softened butter
  • 3 tbsp cocoa
  • 1 tbsp honey
  • 1/2 - 1 tbsp warm water
  • 1 cup icing sugar

Instructions

For the Brownies

  1. Preheat the oven to 350.
  2. Mix together your eggs and sugar for a minute - they'll be getting fluffy.
  3. Add in your butter. And then the rest of your ingredients.
  4. Pour into a greased 9X9 pan and bake for 25-30 minutes.

For the Icing

  1. Mix together all but the water. Add the water slowly until you get the texture/consistency you want.

In the mood something different, but simple for supper tonight? This honey lemon spaghetti and chicken recipe is just what you are looking for tonight. This has be come a favorite recipe in my recipe box now.

This is not the normal tomato sauce spaghetti, but something sweeter, smoother, tastier, and change can be a great thing from the same old spaghetti recipe.

I’ve mentioned a time or two that I love lemon flavored just about anything. I love lemon cookies, and lemon brownies, I love hot honey lemon water, especially when cold, or sick.

This spaghetti is the perfect meal for an evening when you don’t want to cook a big meal but want it to look like you put some effort into it.

It takes no time or big effort to make, but makes spaghetti night a lot more special.

What you need for the chicken and sauce:

  • 1/2 cup honey
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil for sauce + 1 tablespoon for cooking chicken
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • leaves from 2 or 3 sprigs of lemon thyme optional and to taste
  • 4 boneless skinless chicken breasts diced into bite-sized pieces

How to make this Honey Lemon Spaghetti with Chicken:

Cook pasta according to the package instructions.

Pour one tablespoon of oil into the bottom of a large skillet, add you diced chicken. Cook over medium-high heat for about 5 minutes flip, cook until about 90% cooked.

While the chicken is cooking, mix together the honey, 2 tablespoons of oil, lemon juice, vinegar, and optional thyme in a small mixing bowl.

Once chicken is 90% cooked turn heat down to low, add in the honey lemon sauce. Stir in pasta and combine.

Once pasta is cooked and drained, add into your pan with the chicken and sauce, OR add the chicken and sauce in your pot with your pasta, which ever will hold it.

Once combined cover for a few minutes to let flavors combine. Serve hot.

Slow Cooker Honey Soy Chicken

Yum yum yum. I love honey. It’s my favorite winter, cold weather, needs soothing thing. This honey garlic soy chicken and vegetable recipe is perfect for winter… or another time of year for that matter. I love using my slow cooker to make warm you from the inside out, winter meals.

I’ve been been making this chicken dish for awhile now and thought it was time for me to finally share it with you all. After all, it is super simple and fast.

What you need:

  • 4-5 chicken breasts
  • 3 tbsp EVOO
  • 3 tbsp soy sauce
  • 5 tbsp honey
  • 4 cloves of garlic minced
  • 1/2 tsp ground ginger
  • 1/2 tsp pepper
  • 1 tsp crusted red pepper flakes

How you make Slow Cooker Honey Soy Chicken:

This slow cooker recipe only has a few ingredients, they seem to be the best recipes.

Mix everything together in a bowl or, as I did and use a measuring cup. I like to use a measuring cup for the pour spout, it makes it pour out without making a mess.

Pour over chicken breasts in a slow cooker. Again simple.

Fall apart, juicy, tender delicious chicken. I honestly didn’t need the knife for cutting up the chicken for my kids.

Can be served with any side:

  • Rice.
  • Potatoes.
  • Pasta.
  • Salad… this chicken is divine in a Cesar salad.
Slow Cooker Honey Soy Chicken

Honey Soy Chicken Breast for the Crock Pot

Yield: 5
Prep Time: 5 minutes
Cook Time: 5 hours
Total Time: 5 hours 5 minutes

A simple slow cooker meal you can throw together before heading out of the house in the morning.

Ingredients

  • 4-5 chicken breasts
  • 3 tbsp EVOO
  • 3 tbsp soy sauce
  • 5 tbsp honey
  • 4 cloves of garlic, minced
  • 1/2 tsp ground ginger
  • 1/2 tsp pepper
  • 1 tsp crusted red pepper flakes

Instructions

  1. Mix all ingredients minus the chicken together in a bowl.
  2. Place the chicken breasts into your slow cooker.
  3. Pour the rest of the ingredients over the chicken.
  4. Cook for 3-4 hours on high. 7-8 hours on low.

As I mentioned earlier I love honey. One of my favorite things in cooler weather, or for a sweet treat, is hot honey lemon water. It is soothing and delicious. Much better than grabbing a chocolate bar for a sweet craving. It’s also amazing for a sore throat.
