by Ashley Mullen Leave a Comment

When you want chocolate, and your kids want banana bread, and your husband is the only one that has any motivation to make something. That is when you get chocolate and peanut butter banana bread. I mean, adding banana to a recipe helps me feel a little better when I’m eat chocolate chip cookies or chocolate chip muffins.

Peanut butter is like life around. We go through a lot of it. We all love peanut butter on toast, pb&j sandwiches, and peanut butter baked goods. This is one of the baked goods that we love, especially as it includes chocolate too.

The only way we can make banana bread in our house is to hide the bananas from our kids. The most effective way to do that, is to freeze them. When it came time to use them, we took them out to let them thaw, and then our kids took turns mashing them.

Making Chocolate & Peanut Butter Banana Bread

What you need:

  • 2 bananas mashed
  • 1 egg
  • 1/4 cup milk
  • 1.5 cup flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup + 1/4 cup chocolate granola
  • 1/2 cup peanut butter
Chocolate Banana Bread

What you need to do:

Mix together your dry ingredients in a large bowl, adding your wet ingredients, leaving the peanut butter to last. You are going to just mix in the peanut butter.

Chocolate Banana Bread

Spread the batter into a greased loaf pan. Top with 1/4 cup of granola before baking.

Bake 35-40 minutes  at 350 or until inserted toothpick comes clean.

  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup + 1/4 cup chocolate granola
  • 1/2 cup peanut butter

Instructions

  1. Combine bananas, egg and milk. In separate bowl, sift flours, cocoa and baking powder. Add dry ingredients to wet and combine thoroughly. Stir in 1/2 cup granola to batter. This is easy to make. All you need is pizza dough (our recipe minus the thyme), and to then spread the “base” before baking.

  • 1 tbsp butter melted
  • 2-4 tbsp milk enough to get the right consistency

How to make Homemade Dessert Pizza:

Simply mix together brown sugar, butter and cinnamon and spread it over your dough.

Bake it at 400 until the dough it cooked and slightly brown. The spread melted and dark brown.

Homemade Dessert Pizza

The icing on top, is just that. Simply icing sugar, vanilla, butter, and milk. Drizzle it over the top.

Mini Pancake Cups for Breakfast

by Ashley Mullen Leave a Comment

Some mornings just call for something different, something special to start the day off, so you make some pancakes, or mini pancake cups. Or maybe you just ran out of bread and oatmeal the day before you get groceries like us, and you have to make something to feed your children. Which is what happened to me this morning, just gotta feed the kids, anything that I could make before they started eating me!

Mini Pancake Cups

Mini Pancake Cups

Isn’t it funny how your kids will eat something like they were straving when you just change one little thing like the shape of it. That’s how it was with these pancake cups. Not that they don’t usually eat pancakes like crazy too, but these barely touched their plates before they were gone.

The reason for the mini pancakes would be because I’m horrible for standing at the frying pan and not burning the pancakes, plus these are done just that much faster. I made a double batch which gave me 22 muffins.

What you need:

  • 1 1/2 cups milk
  • 1/4 cup butter melted
  • 2 eggs
  • 2 tablespoons sugar
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

How to make Mini Pancake Cups

  1. Mix together your egg, butter, vanilla, and baking powder together. Then alternate adding flour and milk to the mix.
  2. In a greased muffin tin add your pancake batter, filling your cups about 3/4 full.
  3. I topped some with chocolate chips and some with blueberries. You could also add them right into the batter, which my kids would have preferred I think.
  4. Bake for about 15 minutes, they will be slightly golden, bouncy to the touch.
  5. After baking, let them sit for a few minutes before removing to a cooling rack. Ours fall out of the tin, when I tipped it slightly, and actually bounced across the counter.

Homemade Corn Chowder

by Ashley Mullen Leave a Comment

Winter brings out the chowders in our house, as well as the soups, and stews. All the warm foods including this homemade corn chowder. This chowder brings back all kinds of warm memories, brings back warming up after playing in the snow.

Homemade Corn Chowder

*This post may contain affiliate links, see my disclosure policy for more information.*

What you need:

  • 6 potatoes, sliced
  • 1/2 a medium onion, diced
  • salt and pepper to taste
  • 1 tsp celery salt
  • 1/2 cup of bacon bits
  • 1 can of cream corn
  • 1/2 cup of milk

How to make Homemade Corn Chowder

Start back by slicing potatoes, I slice mine thin for a few different reasons: cook through faster, and as the smaller pieces break up, your chowder gets a little thicker – something I learned from a great co-worker years ago.

Homemade Corn Chowder

Dice your onion, throw them in a large pot (soup pot) with your potatoes. Just barely cover your potatoes with water.

Add in salt and pepper to taste.

Add in 1 tsp of celery salt and a handful or two of bacon bits, we prefer Hormel Real Bacon bits. If we have it, I also like to dice some leftover ham and toss it in. It is amazing!

Cook under potatoes are just tender.

Homemade Corn Chowder

Once your potatoes are cooked, ladle out about a cup of water, you want the water level to be under the potatoes.

Add in half a cup of milk, and a can of cream corn.

Bring to a boil over low to medium heat, don’t rush it and keep stirring it, or you’ll end up with scolded milk, brunt corn chowder, neither of which you want.

Once it has come to a boil remove from heat.

Serve warm with a slice of thick bread, or thin sliced toast with butter.

Homemade Lava Lamp for your Kids

by Ashley Mullen Leave a Comment

My kids have never seen actually lava lamp but this was still fun to do and watch. It was really easy to do, to set up, no hard to find items needed. We were all really into this one, Hubby and I included. Science experiments are fun, and I really enjoy doing these with my kids.

Homemade Lava Lamp

Homemade Lava Lamp

*This post contains affiliate links, see my disclosure policy for more information.*

It is simple, you don’t need to have any weird ingredients, you can get everything at the grocery store, or even the corner store. It also doesn’t make (much of) a mess, so you can set it up on the counter without needing a pan to catch the mess. I only like science experiments that are simple

What you need:

  • vegetable oil
  • food color
  • Alka-Seltzer tablets – these aren’t expensive, you can get a lot of reactions out of one little box.

How to make a Lava Lamp:

You’re also gonna need water and a clear jar or glass of some sort. You don’t need a cover.

Homemade Lava Lamp

You want to add a couple inches of water to your clear glass. Adding food color will help you see what is happening better, using yellow, however, will not. We used blue, red, and green.

Homemade Lava Lamp

Add a few inches of vegetable oil to your jar. Just doing this alone is an experiment in its self.

Now, drop in an Alka-Seltzer tablet. Watch the reaction.

Homemade Lava Lamp

Once it calms back down, toss in another one, or two. We put a lot through our oil/water and the reaction didn’t change, it didn’t lessen, just kept on reacting.

For smaller bubbles, break the Alka-Seltzer tablet into smaller pieces.

For larger bubbles (which we had), you can drop the whole tablet (or more) into the glass.

Homemade Lava Lamp

If after a number of tablets your child wants to take a break, go for it, and come back to it later. It will still be there and still work a later on.
