Thai Stir-fried Noodles – Guest Post

Thailand is famous for its food culture and the incorporation of salty, sweet, bitter, sour and spicy into all of its dishes. This unique combination of flavors makes Thai food so multi-dimensional and delicious, and is the perfect addition to your recipe box. Thai Stir Fried Noodles is one of the staple dishes from this region and it is extremely easy to make at home! This post comes from Victoria at How Daily.

A Taste Of Thailand

Thai stir-fried noodles actually have roots in Chinese cuisine. It is thought that Chinese trader brought the dish to Thailand’s old capital Ayutthaya. Although Bangkok is the capital of Thailand today, you can still visit the old capital and get traditional stir-fried noodles while wandering around the ancient ruins.

If a plane ticket is not in your future, don’t worry! You can still make an authentic version at home from ingredients you can find right at your local supermarket.

The Ingredients You Will Need

The first thing you will need is a good wok. Frying pans will not work for making Thai stir-fried noodles. For the true taste, invest in wok. You will be able to use it for any number of additional delicious recipes so it is a great piece for your kitchen.
Prep time:  10 mins  | Cook time:  30 mins | Serves: 2 – 3

Ingredients:

  • 16 oz rice noodles
  • 2 or 3 cloves of garlic depending on your taste
  • 1 shallot or small onion
  • Meat of your choice- if you are vegetarian you can substitute tofu or just load up on additional veggies
  • 2 eggs
  • 4  tablespoons brown sugar (do not use white sugar)
  • 3  tablespoons of soy sauce
  • 3  tablespoons of fish sauce (available in the international aisle of your supermarket)
  • The juice of one lime
  • Vegetables of your choice
  • Bean sprouts

To make it really authentic, add the following:

  • 1 tablespoon of oyster sauce
  • Fresh cilantro
  • Ground peanuts

Do not be put off by the smell of fish sauce. Your final dish won’t have that fishy flavor.

Instructions:

  1. Cook the noodles according to the package and set aside.
  2. Heat your oil and add garlic, onion, oyster sauce and your meat (if you’re using it). Cook your meat all the way through.
  3. Throw in your eggs and mix everything together.
  4. Add the noodles, all additional ingredients except for the cilantro and lime juice and cook together until the vegetables are done but still crispy.
  5. Transfer your noodle mixture to a bowl and garnish liberally with cilantro and a generous squeeze of lime.

Cook Time: 20 minutes

Serving Suggestions And Accompaniments

Your stir-fried noodles will be delicious as is, but if you are looking for a traditional experience feel free to sprinkle on some dried or fresh chilis or even another dash of fish sauce. Add extra peanuts on top for a satisfying crunch and enjoy your taste of the far East!

How To Raise Kids That Understand Money Management, Even If You Don’t

As parents, we’re constantly tasked with finding ways to teach our children the critical life lessons that they will need to be well-functioning adults. As if this wasn’t challenging enough, this process gets a whole lot trickier when you are trying to teach something you might not be good at yourself. Finances and money management is a perfect example. How are parents supposed to teach their children to be responsible with money, if they are struggling with debt? Irrespective of your own financial situation, there are some simple yet powerful ways that anyone can raise their kids to have a better understanding of how to manage money. Who knows, maybe you’ll even learn something new along the way.

Kids Need Money To Manage

First and foremost, experience is often the master of all teachers. One of the best ways for children to learn the fundamentals of managing money is by managing theirs. Of course, parents shouldn’t just hand out cash to young kids. Instead, help them come up with ways to earn money, through an allowance, doing chores around the house, or even by starting their own little business like a lemonade or cupcake stand.

Once kids have their own money, they can start to make decisions about how to use it. Encourage them to consider allocating a portion of their funds toward spending, while setting aside some to save. The goal is to make them understand that it takes work to earn money. Then, they should learn the value of a dollar by making their decisions about what to do with it.

Look For Teaching Opportunities In The Everyday

You don’t need to set aside time for money lessons. Instead, look for opportunities during daily errands and activities to teach your kids about money. Real life examples of how you spend money as a family can help them understand how to manage their finances someday.

One great way to demonstrate money management in action is grocery shopping. Talk to your children about budgeting, the pricing differences between name brands and generic options and taking advantage of sales, instead of just buying everything you want in the moment.

Let Them Make Mistakes

Parents are always looking out for their kids and trying to protect them from getting hurt; that’s normal! However, making mistakes can provide them with powerful and memorable lessons. Your children might want to use their savings to purchase a toy that you know is a piece of junk. Go ahead and give them some advice, but let them make the final decision.

The thing to keep in mind is that your kids are only making mistakes with relatively small amounts of money right now. They will still learn a lesson, but it’s better than them making those same mistakes with much larger sums of money once they become adults.

Be Open About Your Financial Issues

Children can learn from their mistakes, and from yours too! Be open with kids about your own financial situation. They don’t need to be privy to all of the specific numbers (because we all know how they like to overshare) but talk to them about the basic concepts. Explain how you go to work for income and use that money to pay your bills. Talk about all of the things in their daily life that they probably take for granted, and how much they cost.

A trickier topic is something like dealing with credit card debt, but it’s a great lesson for kids. Discuss how you used a credit card to borrow money that you didn’t have, to buy something. Now, you have to pay back much more than you initially borrowed because of the interest. Help them understand now, long before they get their own credit card, how dangerous it can be to rely on someone else’s money.

Teach Them About The Power of Interest

Kids should learn at a young age that interest can hurt their financial situation, or it can help them increase the amount of their funds. There are two excellent ways to teach them this lesson. First, you can hold their money for them and act as a bank. Keep track of their balances and award them an agreed-upon percentage of interest every month.

The other option is to have your child open up an actual savings account at a bank. Many institutions offer fun incentives for kids, like their own checkbook or a special prize on their birthday. Not only will kids feel pretty grown up visiting the bank, but you might also be able to teach them how to balance a checkbook.

Most of us probably could have benefited from a few more lessons about money growing up. Strive to do better for your children by taking the time to talk to them about finances while they are still young. You don’t have to be an expert. Just like every penny helps, every little lesson is sure to make a difference.

What Makes Your Heart Smile?

I was so excited when Ashley from Forgetful Momma asked me to write a post for her blog.  It is such an honor to be asked to write for another blogger!  My goal was to write something special for Ashley and I think I accomplished that goal.  I love my children beyond the moon.  Though they are much older now (21, 17, 15, and 10) my love for them still shines from inside my soul.

I was cleaning my kitchen table the other day and I found something that made me smile. Before you jump to any conclusions let me explain.

I home schooled my three older children from kindergarten to 6th grade. Every morning we would sit at the kitchen table and do our lessons.
Our home school days are long gone but the memories linger. While cleaning the table I found numbers and math problems carved into the table top. I imagine the kids pressed too hard with their pencils on the soft pine table top.

This find made me smile. It made my heart smile.

Hello ladies, thank you for having me today. On my blog Glamista Home, I talk about transforming your world from boring to glam. When I say that, I mean how you can add a little glitter and glam here and there to feel better about yourself. You can create a beautiful way of life with only a few tweaks.

Ladies, we are fabulous! We take care of everyone around us: our partners, our children, parents, our co-workers and pets, but the one person we typically forget is ourselves. How great could it be if we took some time out of the day to spend on us, ourselves, our well-being. Put some mascara on, paint our nails, relax with a cup of tea and a good book. As much as we want to do that, at times we simply don’t have the right place to just let loose.

Shrimp Turtles – Simple Shrimp Appetizer

Kids sometimes need to eat with their eyes first, and if food is cute on their plate they are more willing to try it. This strategy works perfectly for my daughter and it helped her to discover and taste new food – vegetables and fruits – in a pleasant way.

I love shrimps and I used to cook quite a lot of meals with shrimps when we lived in the south of France. When we were buying them fresh, my daughter was intrigued each time (she was still a baby at that time).

I guess she was wondering if they were to eat or to play with… I must admit that it has been a while since I have not cooked shrimps at home, so the time has come to change this!

I bought shrimps and decided to prepare a nice simple shrimp appetizer so my daughter could try them. These are very easy to make and really delicious, my daughter loved it! They are disappearing really quickly, so make sure you have made enough.

What you need:

  • 1 egg
  • 2 tablespoons of creamy cheese, e.g. Boursin
  • 1 tablespoon of sour cream
  • around 30 cooked shrimps
  • 1 clove of garlic
  • oil

How to Make this Simple Shrimp Appetizer

Separate the egg white from the yolk.

Whisk the egg white until it stands up in well-defined peaks. Mix the egg yolk and then add it gently to the white and mix with a spoon.

Turtles Step 1

Use a spoon to place the mixture onto the non-stick baking paper, shaping ovals. Bake in the pre-heated oven on 180C/360F for around 10min, until golden.

The ovals need to be hard enough to cut them, should not be wet inside.

In the meantime, coat the bottom of the pan with olive oil and add smashed garlic. Put shrimps into the hot pan and stir them with a spoon frequently so that both sides of the shrimp get cooked.

Cook them over high heat for 3-4 minutes.

Cut each egg mixture oval lengthwise and spread it with cheese inside. Place shrimps around each oval to make turtles legs and head.

Cut shrimps if needed to adjust the length.
