Pepper and Egg Cups for Breakfast

Breakfast time! Come and get it! Though I rarely actually have to call anyone to the table to eat. These pepper and egg cups are delicious and filling. While my kids don’t care for these, they are against egg, but Hubby and I enjoy having them ready to heat up each morning. Hubby can grab them on the way out the door on his way to work.

These are easy to make, healthy, and they are extremely filling. They taste great as is, along with other breakfast foods, and they are amazing in an English muffin, making your own version of an Egg McMuffin.

What you need:

  • 1 ⁄2 cup Hormel Bacon bits
  • 1 ⁄2 cup uncooked bell peppers
  • 10 eggs
  • 1 ⁄4 cup plain unsweetened almond milk – or your choice of milk
  • 4 oz shredded part-skim mozzarella cheese
  • 1 tsp basil

How to make breakfast egg cups:

  1. Grab a large bowl, crack 10 eggs into it.
  2. Add in your milk, 3/4 of the shredded cheese, diced peppers,  basil, and bacon bits into the bowl too.
  3. Mix everything together really well.
  4. This part is important: spray your muffin tin really, really well with non-stick spray. These will stick. They’ll stick slightly even with spraying well. I get between 10-12 cups, depending on whether I go overboard with peppers.
  5. Sprinkle remaining cheese on top.
  6. Bake at 375 for 30 minutes.

Cook Time: 30 minutes
Total Time: 40 minutes

Make ahead egg breakfast cup for breakfast on the go.

Ingredients

  • 1 ⁄2 cup Hormel Bacon bits

These pepper and egg cups are perfect for making up ahead of time. Either throw a couple into the microwave or oven to reheat for breakfast on the go. These are the perfect make ahead breakfast for Christmas morning.

I bought silicone muffin liners to see if there was a difference in ease of getting the breakfast egg cups out, and the answer is: yes. And no.

The trick to getting them out without breaking them up is this: let them cool completely. When they are still hot they fall apart. I know how hard it is to just leave them be because they smell so good.

An Easy, & Tasty, Classic Potato Salad Recipe

Hot summer days call for cold salads by the BBQ. A perfect side to that delicious burger, or chicken breast, or fish. My kids have been begging for me to make this potato salad, and I can’t say no any longer, because I love it too. Cool salads are the perfect thing on a hot summer day.

In the summer its tends to be too hot here in Southeast Saskatchewan to want to eat, let alone to eat hot foods. We rarely use the oven, even the slow cooker can be too hot for summer. 

We like to do some more BBQing so the heat stays outside. Adding on a cold salad like this one to the side and you have the perfect summer meal.

I hated potato salad, or all salads, growing up. I didn’t like vegetables at all in fact. The first time I tried potato salad again was at my sister-in-laws, and it was good. So good that I started making it myself.

Classic Potato Salad

What you need:

  • 5 medium potatoes, diced, boiled
  • 1 cup mayo
  • 2 tbsp cider vinegar
  • 2 tbsp sugar
  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1/2 cup onion, minced
  • 3 eggs, hard boiled, chopped
  • salt n’ pepper, to taste
  • paprika, optional

How to make Potato Salad

Boil your eggs. I only just learned how to do this, it involved Google. (And I hang my head in shame.) In my defense no one in our house has liked boiled eggs so it wasn’t something I needed to know how to make.

Boil your potatoes. You want your potatoes done, but not too well done, you want them firm still so they don’t go to mush when you are mixing everything together.

It’s best to have this one planned ahead of time. It doesn’t work as well as a last minute side, it can be done though, just works better planned ahead.

I refrigerate both my potatoes and eggs, once they are diced in a good sized salad bowl. The key to a great consistency is dry potatoes.

Classic Potato Salad

When you are ready to either, serve or head off to your BBQ mix everything together. Some people like to mix their potato salad just enough to mix it all together just as I do. Some, like my aunt, whip it till it is just about smooth.

Sprinkle some paprika over the top if you choose, but I like the added bit of flavor that it gives. It is completely optional of course.

Make sure you leave this in the fridge until you are ready to serve to prevent the mayo from going bad and someone getting sick.

Cook Time: 20 minutes
Total Time: 30 minutes

This classic potato salad is perfect on the the side of something you have cooked on your BBQ, adding a nice cool touch to your meal.

Ingredients

  • 5 medium potatoes, diced, boiled

  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1/2 cup onion, minced
  • 3 eggs, hard boiled, chopped

  1. Mix together all but the paprika in.
  2. Sprinkle the paprika over your potato salad.

We really like apples here. They are always in our fridge, an easy, healthy snack, and they make a great healthy add in. I never thought about adding delicious apples to one of my lest favorite foods, eggs. Scrambled egg might be the perfect breakfast food but my kids and I are still working on liking them.

We have been experimenting a little with cooking and baking with apples like this apple coffee cake recipe, yum.

As I get older my tastes have changed a lot but I still don’t like eggs all that much. I have tried a lot of different recipes and types but they still are a no go… except I like these.

Scrambled eggs with apple, and a little cinnamon and sugar. I think it’s the sugar that makes the eggs bearable for me.

This is a simple, easy way to make eggs which is my favorite way to cook anything.

What you need:

  • 4 eggs
  • 2 apples – peeled and cut up
  • 1 tsp cinnamon
  • 1 tbsp white sugar

How to make Scrambled Egg and Apple:

Dice up an apple, with a Pam covered frying pan toss the apples in and start tenderizing them. After about five minutes sprinkle a little cinnamon and sugar over the apples, stir them around and crack eggs over them.

Now, if you are a great omelet maker/flipper, then by all means have a omelet. But if you’re like me and can’t flip a single egg then have some scrambled with me.

One day I forgot that I was going to be babysitting, therefore didn’t have anything “lunch” to feed all six kids. I made this and it has become a favorite with the kids I babysit and I have made it more often for them. A healthy and easy lunch idea.

Yield: 4
Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes

Ingredients

  • 4 eggs
  • 2 apples - peeled and cut up

  • 1 tbsp white sugar

Instructions

    1. Dice up an apple.

    4. Once the eggs have cooked 3/4 ways done, flip! And you have the makings of an omelet. OR Scramble them when they are about 1/2 cooked, and continue to scramble them until cooked.

This would be an easy breakfast for your kids to make as well. Scrambled eggs in general are easy to make. Eggs and apple is just as easy to make for a sweet breakfast.
