Peanut Butter Chocolate Chip Cookies

Baking has become a fun way to spend time some one on one time with each of our kids, but my oldest has gotten to the point where she doesn’t need help anymore and these cookies she made were delicious! She did a great job with no help from anyone. I love her independence in the kitchen and the delicious treats we all get to enjoy from it. These peanut butter chocolate chip cookies came out looking amazing, but they that tasted even better!

Peanut Butter Chocolate Chip Cookies

What you need:

  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1 cup margarine softened
  • 1/2 c creamy peanut butter
  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/2 c chocolate chips

How to make Peanut Butter Chocolate Chip Cookies:

This recipe is simple enough. Mix all the ingredients together, leaving the chocolate chips for last. Then scoop your cookie dough onto either a greased cookie sheet, or a cookie sheet lined with parchment paper, and bake.

Simple enough that my nine year old made them without help. There aren’t too many life skills that are as important as knowing how to cook, says a Momma who has to look up how to boil an egg when she makes potato salad. BUT in my defense, no one here eat boiled eggs so it’s not something I need to know how to do at the drop of a hat.

Getting our kids in the kitchen is one of our most favorite ways to spend some one on one time with them. My youngest, at almost 5, wants to be a taste tester and a chef when he grows up. And a superhero.

My kid knows her way around the kitchen, and knows to set the time for her cookies. Don’t they look delicious?!

Peanut Butter Chocolate Chip Cookies

Yield: 30
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1 cup margarine, softened
  • 1/2 c creamy peanut butter
  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/2 c chocolate chips

Instructions

  1. Preheat oven to 375
  2. Mix margarine, sugar and egg.
  3. Add in remain ingredients, leaving the chocolate chips for last.
  4. Drop spoon fulls onto a cookie sheet lined with parchment paper or a silicone sheet.
  5. Bake for 8-10 minutes, until the edges are golden.

As my kids get older I’m realizing more and more just how important the time we spend together is. Today I’ve gathered up 5 fun Easter traditions you can start with your family. These are some fun family traditions will help your family have an extra fun things to do this Easter.

Glow in the Dark Easter Egg Hunt

  • Plastic Easter Eggs – medium – large size work best
  • Glow Sticks – smaller ones that fit into your Easter eggs
  • Tape
  • Candy

Easter Bunny Foot Prints

Cut out this bunny foot print template and leave a trail around your home. I’ve seen people using powdered sugar, flour, baking soda, or baby powder for footprints. Just keep in mind any pets you may have in your home and their safety.

Peep S’Mores

  • Peeps
  • Hershey’s chocolate squares
  • Graham crackers

Place graham crackers, chocolate and a peep as shown in first picture. Zap in the microwave until soft. (Or place under broiler.) Top with another graham cracker square.

Easter Egg Pancakes

  • Pancake recipe – this is our recipe for fluffy pancakes but any recipe or mix will do the job
  • Food color

Divide your pancake batter into smaller bowls to dye different colors before cooking. Add a bit more fun with pancake molds.

Mini Egg Cookies

Mini Eggs are delicious just the way they are and I am a huge fan of them. I can’t get enough of them. If you are looking to spread them out though make some cookies. Two of our favorite ways to enjoy them, as cookies and not straight out of the package, are:

To use them in place of jam in Thumb Print Cookies. A little dot of chocolate or vanilla frosting to hold them in place.

Use them in place of chocolate chips in Chocolate Chip Cookies. You might want to go a little lite on the mini eggs because they are a lot of chocolate.

Chocolate Chip Peanut Butter Cookies

I love peanut butter cookies,  throwing in a cup of chocolate chip seemed like a good ideas. I can’t make cookies very well, because I always forget that they are going to continue to cook for a few minutes after they come out of the oven. This usually equals burnt cookies. But these ones, while a little crispy around the edges, they were delicious!

These are delicious cookies… easy to make too if I can make them, and if you actually know how to use a timer (unlike me, I forget to set it), and you can tell when cookies need to come out of the oven, you’re set!

What you need:

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 1 cup butter softened
  • 2 eggs
  • 2 tsp vanilla
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 cup flour
  • 2 cup chocolate chips

How to make Chocolate Chip Peanut Butter Cookies:

Mix together the eggs and butter until fluffy. Add in your sugars and mix well. Add in the rest of the ingredients – minus the chocolate chips and mix.

Fold in your chocolate chip, my recipe calls for 2 cups, but next time I’ll go with less because I love peanut butter cookies so much.

Now you can use a mixer for this… my mixer bowl was in the dishwasher. My dishwasher is not reliable lately, so I just did this by hand.

I like big cookies, I placed just 6 per cookie sheet to avoid them spreading together.

Bake cookies in a preheated oven at 375 for 8 minutes. Longer than 8 minutes and my cookies were well done. Less done, and they were a bit more chewy.

No Bake Oatmeal Peanut Butter Cookies

As we get more warm days, we stop using our oven as often, but that doesn’t mean that we stop wanting sweet treats. It just means that we want no bake oatmeal peanut butter cookies instead. Or Poop Cookies – another no bake cookie recipe that we love, it has coconut and we’re big fans of it here.

No bake cookies are great for hot summer days, you don’t have to have your oven warming up your house even more.

No Bake Oatmeal Peanut Butter Cookies

No Bake Oatmeal Peanut Butter Cookies

What you need:

  • 3 cups oats
  • ½ cup butter
  • ½ cup milk
  • 2 cups sugar
  • ½ cup peanut butter
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla

How to make No Bake Oatmeal Peanut Butter Cookies

Line a couple cookie sheets with parchment paper and set them aside.

This are perfect cookies for having some help to make. I had three handy helpers in my kitchen helping. Yes, we have watched a lot of Mickey Mouse Clubhouse in case you recognized that reference. They are able to do everything here, the only spot you might want to help with is when you bring the ingredients to a boil over medium-high heat.

The best part of this recipe, I think, is that you throw a bunch of the ingredients into a large pot to bring to a boil. Into the pot you put the butter, cocoa, sugar, and milk. Once you see some bubbles coming to the surface, count to 30, and the remove from heat.

After you remove it from the hot burner, add in your remaining ingredients – the oats, vanilla, and peanut butter. I recommend starting with the peanut butter to have it melt in before adding in your oats.

Scoop them out onto your parchment lined cookies sheets. I make cookies BIG, that way we are coming back for more as often. Saves calories burned! HAHA!

Put them in your fridge for at least 30 minutes to set. And then enjoy your no bake oatmeal peanut butter cookies that will be great for a hot summer day.

No Bake Oatmeal Peanut Butter Cookies

Yield: 22
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 3 cups oats
  • ½ cup butter
  • ½ cup milk
  • 2 cups sugar
  • ½ cup peanut butter
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla

Instructions

  1. Measure oats into a large bowl and set aside.
  2. In a large skillet, combine butter, milk, sugar, peanut butter, and cocoa.
  3. Stir together over medium heat (no higher) until fully combined. Don't quit stirring.
  4. Once it is boiling while you stir (not just small bubbles around the edge, but a rolling boil) set the timer for 4 minutes.
  5. Continue stirring constantly making sure to scrap the sides of the pan as needed.
  6. When the timer goes off, turn off the heat and add vanilla. This will cause the mixture to bubble up. Stir.
  7. Add the oats and mix until completely covered. Try to work fast as the start to harden as they cool.
  8. Scoop onto wax paper, using a greased cookie scoop if you have one.
  9. Let fully cool, about 20 minutes.

Holiday Baking Tips and Tricks

The holidays are just about here, or in the case of Canada, here and enjoyed, and coming again. If you do any holiday baking, with or without your kids, be prepared, that’s the best piece of advice for anything in reality isn’t it? Be prepared.

I miss doing a lot of baking for the holidays, with just the five of us, I can’t make a lot, because then I have a lot to eat, I have no willpower against sweets! I have enjoyed every pound I have gained.

If you do any baking at all for the holidays, you’ve most likely done the pie and turkey shuffle. Or maybe you’re trying to get all your cookies baked on a deadline, either way this 3 tiered oven rack is going to make your day! I want one, I have it on my wish list, and currently in my shopping cart to make sure it gets ordered!

I don’t know what I did before we bought our Kitchen Aid mixer. The attachments alone are amazing and a time saver, no more mixing this by hand, or digging out a whisk. Have you seen the attachments you can get for them too? The cheese grater? LOVE IT!

Holiday cookie cutters to make your sugar cookies extra special, and fun for your kids when they are cutting out the cookies.

On the topic of cookies, stack-able cooling racks are amazing. We have been using ours for years, they are great in smaller kitchens that have limited counter space, plus we love using them when we bake chicken breast for more even cooking and you don’t have to flip the breasts.

Best Tips

I love using silicone mats when baking cookies now, they don’t stick and if they do stick a bit, simply lift the mat and peel it away. Plus those that have the circles on them for cookie placement are great for those of us that tend to crowd the cookie sheet. And gives your kids a specific spot to put their cookies.

Simple Chocolate Cookies

Make sure you have everything the recipe calls for before you start. If there is another baker in your house, double  check, because I can’t count the number of times my husband or I end up with half the ingredients in the mixing bowl to realize the other used the last of something we need.

Make sure you have the right tools for the job. If you want something to turn out right or perfect, you gotta have the right tools for the job. There is no point in make a cake without a cake pan.

Best Tricks

Use parchment paper to line cake pans to make them easier to remove.

Instead of spending money on piping bags use a baggie and a pair of scissors. Cut a small hole in one corner.

Use cookie cutters to make perfect shapes on cakes: simply place the cookie cutter on, sprinkle in some sprinkles.

Remember to have fun, and don’t feel guilty about a little taste testing as you do you holiday baking.
