Bang Bang Chicken Pasta – 30 Minute Meal

This has to be my favorite budget meal ever! This bang bang chicken pasta is delicious and so easy to customize to your taste. You can also customize it to your budget and whatever you have in your house. This recipe is fast and easy to make and one to keep around for busy days.

Pasta is a favorite around here, the kids love to eat it and it is very budget friendly, perfect for when you are running low on groceries or maybe your grocery budget is low this week.

What you need:

  • 12 oz pasta
  • 1 lbs chicken breast, boiled and cut up, optional

Sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup sweet chili sauce
  • 1 tbsp honey
  • 1 tbsp sriracha sauce
  • 1 tbsp lime juice

How to make Bang Bang Chicken Pasta

When you are looking for something for supper and you’re digging around in the freezer to see what you have and you find one lonely chicken breast, you get creative. And cut it up quite small so it goes farther.

Cook your pasta according to the instructions on the package, or by tossing into a pot and forgetting about it for a bit while doing other things like me. You can use whatever pasta you have on hand, I used penne this time but have also use spaghetti and spirals.

I also boiled the lonely chicken breast I found in my freezer and diced it up. This is optional, you don’t have to add chicken, it tastes amazing without it, and pasta is great at filing up without adding meat to it.

In a bowl or large measuring cup mix together the mayonnaise, sweet chili sauce, honey, sriracha sauce, and lime juice. I do add a splash of hot sauce because we like a little more heat to ours.

Once the pasta and chicken are cooked, I dice up the chicken breast, and mix everything – chicken, pasta, and sauce – together in a large bowl.

Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

  • 12 oz pasta

  3. Mix together the sauce in a bowl or measuring cup and pour over and mix into the chicken and pasta.

Look at that recipe, super easy to make. And easy to customize to your taste. I like to add a splash of hot sauce as we like a little more heat in ours.

We top our bang bang chicken pasta with crispy fried onions that I get from Costco. We top a lot of our meals with these because they are that yummy, not healthy, but yummy.

Loaded Potato and Chicken Casserole

I have been making this casserole for a few years now. Every time I make it, I need to make just a little more, and a little more. All in hopes that there will be enough for me to have for leftovers the next day. And it’s not like I can’t figure out the portions to make to feed my growing family, its that everyone in this family loves the loaded potato and chicken casserole so much that they don’t seems to want to stop eating.

I actually use my roasting pan now to make this, because my casserole dishes weren’t cutting it anymore. This helps to give everything a nice crispiness.

What you need:

  • 3 chicken breasts
  • 4 potatoes
  • 4 carrots
  • 1/2 onion
  • 1 cup of bacon bits
  • 1/3 cup EVOO
  • 2 tbsp hot sauce
  • 1 1/2 cups cheddar or Tex Mex Cheese
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • salt and pepper to taste

How to make This Loaded Potato Chicken Casserole

I boil my chicken to make sure that it is cooked through. I have made this before and the chicken took forever to cook and the veggies ended up either burnt or mushy.

Peel and dice the potatoes and carrots, and chop the onion while the chicken is boiling. Add some oil, hot sauce, and seasonings to the vegetables and toss in a good sized bowl to fully cover everything. Dump into a large casserole dish that has been sprayed with non-stick cooking spray.

Once the chicken is cooked though, cut it into bite sized pieces. I then put my chicken into the same bowl that I used for the veggies, that way it grabs any leftover seasonings from the bowl.

Dump it in with the veggies, add your bacon, cover and bake for 20 minutes.

Stir it all together after 20 minutes, and back into the oven for 20 minutes. Repeat for a total of an hour.

After the hour, spread some cheese over top, leave uncovered and bake for 5-10, long enough for the cheese to melt.

Total Time: 1 hour

Potato, carrots, onions, and chicken breasts all diced and baked in a delicious spicy oil. Crispy and cheesy.

Ingredients

  • 3 chicken breasts

Nacho Doritos Chicken

Those days where you have no idea what to make, and your searching through the cupboards to find something, anything to make for supper, ugh, you know what I mean right? Well that is where this recipe came from. We had nacho Doritos, and therefore we had chicken.

We have become huge fans of chicken breast coated in whatever lately. Mainly because there are really is no end to the possibilities that you can put on them. Such as garlic Parmesan chicken, or crispy chicken, plus you can side with veggies, mashed potatoes, or rice. Or in the case of the crispy chicken, it is amazing as chicken burgers!

This recipe is really simple, super simple, for those nights when your brain just can’t take it anymore.

Start by making an egg wash in one bowl. Combine the Doritos and flour in another bowl.

You can cook full chicken breast, or as we do, halved chicken chicken breasts. First into the egg bath, then coat fully with the Doritos and flour mixture.

We like to bake our chicken on a cooling rack on a baking sheet. We make sure to coat the cooking rack with non-stick spray first otherwise you are going to have quite a mess to clean off your cooling rack.

Spray a lite coat of non-stick/oil over the chicken, this will give it a nice crisp after baking.

Bake at 375 for about 45 minutes until your chicken is fully cooked.

This is one of my kids favorite chicken meals that my Hubby makes. He tends to make it when the girls and I go to gymnastics so just he and Gauge get to enjoy. It’s not fair that they get to enjoy this crispy chicken recipe, it is just so good that no matter how much we make it never seems to be enough.

This recipe gives you a chicken that is very similar to a popular chicken place. 😉

It is simple to make, a bit healthier than a deep fried chicken too which is always a bonus.

Crispy Chicken

Put chicken in enough water to cover and add soy sauce (approx 1/2 cup) to create a brine. Allow to rest in brine for at least 4 hours.

Mix together your dry ingredients in a good sized bowl.

In another bowl beat together the eggs and milk. Dip each piece of chicken into the egg/milk mixture, coating all the of the chicken.

Then coat the chicken in the bread crumb mixture, you want a thick coat. Lay over a cookie sheet (and, if you choose a cooling rack).

We bake it on a non-stick cooling rack that has been very coated with non-stick spray.

Then the top of the chicken really well with the vegetable spray.

Bake at 375 for 40-45 minutes or until chicken is cooked through.

Sweet Garlic Chicken Ready in 30 Minutes

We love chicken, we love garlic, and when foods are a little sweeter, my kids eat a little faster, with less whining. Sweet Garlic Chicken is simple to make, great for busy days too because you can make it in less than 30 minutes. Chicken that can be ready in less than 30 minutes is king!, at least to me it is, as a chicken fan.

You may also want to check out some of the delicious and quick skillet meals that have been added to our recipe box, like a chicken fajita skillet. I’m all about one pan to wash, and getting it on the table quick.

We are big fans of chicken meals here, my kids love it, and I love that you can make it so many different ways. One of those being this delicious chicken meal.

What you need:

  • 2-3 Chicken Breast
  • Salt & Pepper to taste
  • 2 TBSP Olive Oil
  • 5 Cloves Garlic, minced
  • 3 TBSP Brown Sugar

How to make Sweet Garlic Chicken:

Start by sauteing your garlic in some oil for just a couple minutes, you don’t want it to become bitter. After those couple minutes, mix in your brown sugar.

Place your chicken breast in a casserole dish – either line it with tin foil or spray with non-stick. This can be difficult to try and clean – just a warning. I season my chicken with salt and pepper before pasting on the brown sugar and garlic.

Bake at 425, uncovered for 20 minutes or until the chicken is cooked through. Cook your chicken until juices run clean, but your chicken isn’t dried out.

Enjoy! My favorite part has to be the garlic sweetness that crisps up in the oven over the top of your chicken… and I may be drooling as I write this.
