Tasty Chicken, Broccoli and Pasta Skillet

Last night I had no idea what to make for supper, just like so many others out there. I did know I wanted chicken and broccoli, but that was really no surprise, as I always want them. A pasta skillet was just the think I wanted, and would make everyone want to eat their supper.

Pinterest is my go to for recipe ideas. There are so many different options on there for chicken and broccoli from using the slow cooker, to casseroles, to skillets., and now, the Instant Pot.

What I ended up making, was a pasta skillet. I didn’t follow any particular recipe, just looked at a bunch and picked things I liked from them. Which is my usual way of making supper. This is what I made, and just LOVED!

This was a simple throw together meal, perfect for last minute meals.

What you need:

  • 2 medium boneless chicken breasts
  • 2 tbsp EVOO
  • 12oz frozen or fresh broccoli, cut into bite size pieces
  • 1 (16oz) box of pasta
  • 1 can of cream of chicken condensed soup or one mix of my homemade cream of soup
  • ½ cup shredded cheese, mozzerella
  • salt and pepper, to taste

Cook pasta according to the package directions.

While pasta is cooking, brown chicken in hot skillet with EVOO. Once cooked through remove from heat and dice.

Once pasta is cooked remove from water and add to skillet with diced chicken. In the hot water from your pasta, throw in your broccoli, just to make it just tender.

Grate your mozzarella cheese while you want for things to cook.

Once your broccoli is tender, add it to the skillet, along with the cream of soup. Mix well.

Top with shredded cheese and then broil on HIGH for 5 – 10 minutes until the cheese melts and just starts to brown.

Mustard Crusted Chicken

There are so many different ways to cook chicken, which is probably one of the reasons that we eat so much of it. I get tired of trying to find ways to cook ground beef – I don’t care of the taste of it and can’t stand the greasy taste and feeling it has. Chicken is lean and juicy. This mustard chicken is juicy, crispy, and full of flavor.

What I used for making this recipe was really simple, it was what as in my fridge.

This cheese is my Hubby’s favorite. Parmesan, Romano, Asiago. We can’t find it everywhere, and it is a bit on the expensive side as far as cheese goes, but it is really good.

This sweet onion mustard is extremely good, but like the cheese we can’t find it everywhere. We have to go to Co-Op to get it.

Start with some thawed, patted dry chicken breast. One per person, or more, it’s up to you. Make sure to pat the chicken dry, it makes it much easier for the next steps.

On your patted dry chicken, spread some mustard over your chicken. I made sure that there was a thicken coat over the top of my chicken breast. A pastry brush works great for this.

ChickenIn a shallow bowl I mixed about a 1/4 cup of the cheese with about 3/4 to 1 cup of bread crumbs. I also added a little shredded mozzarella because it was in the fridge already shredded, a little left over from taco night. You can definitely do without it.

Now, mustard side down, place your chicken in the bread crumbs. To get a good coat, I press down on the chicken, wiggle it around a bit.

I bake my chicken on a cooling rack, on a baking sheet. You don’t have to worry about flipping your chicken, it cooks evenly all over. For easy clean up line your baking sheet with fin foil.

Bake at 400 for 25 minutes or until your chicken is done.

Mustard Crusted ChickenThat looks so good! It has cheese which is always a big hit here. The topping is crispy and delicious. These would also make good chicken strips. Even more enticing for children.

Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients

  • 5 boneless, skinless chicken breast
  • sweet onion mustard
  • 1/4 cup parmesan cheese
  • 3/4 cup to 1 cup fine bread crumbs, depending on how much chicken you have

Instructions

  1. Make sure you have patted your chicken dry. Then cover the top of it with your mustard. The mustard will stick better to dry chicken.
  2. Mix your cheese and bread crumbs in a low sided dish.
  3. Place mustard side down into the crumb mix. Push it down, wiggle it a bit to give your chicken a good coating.
  4. Bake for 25 minutes at 400, or until chicken is cooked.

Cheesy Chicken and Bean Casserole

I’ve been cooking meals that are cleaning out the cupboards, fridge and freezer again. Without Hubby home to help eat all the food, it’s taking longer to consume it all. Trying to be inventive, using up stuff and still making something the girls will eat. Not an easy combination. However, this casserole, was amazing! Both girls liked it, Brookland came back asking for more.

It was super easy.

What you need:

2-4 chicken breast, cut into bite size pieces
2 tbsp olive oil
4 cups of yellow & green beans, other vegetables
2 cups of vegetable or chicken broth
3 tbsp butter
5 tbsp flour
1/2-1 cup cheddar cheese, shredded

How to make Cheesy Chicken and Bean Casserole:

I cut up a chicken breast into bite size pieces, seasoned them with some spices, I used a mixed pepper and garlic seasoning. I fried in in some olive oil until completely cooked.

I added yellow and green bean as well as come carrots to the frying pan with chicken and covered it. Letting the vegetables steam. While the vegetables are steaming, I made some cheese sauce. Same steps to making gravy, minus the Worcestershire sauce, added 1/2 -1 cup of cheddar cheese at the end, stirring it in.

I threw the chicken and vegetables in a casserole dish once the vegetables were tender, poured the cheese sauce over it all and baked it at 350 for 20 minutes.

I’ve made this a few times in the last few weeks, that’s how much we like it. The last time I made it I added broccoli to the rest of the vegetables. I didn’t make enough, Austin has become quite the broccoli lover lately.

Basically, any vegetables that you love would work great, peppers even, whatever you happen to have on hand.

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Ingredients

  • 2-4 chicken breast, cut into bite size pieces
  • 2 tbsp olive oil
  • 4 cups of yellow & green beans, other vegetables
  • 2 cups of vegetable or chicken broth
  • 3 tbsp butter
  • 5 tbsp flour
  • 1/2-1 cup cheddar cheese, shredded

Instructions

Chicken and Vegetables

  1. Fry the chicken in oil, season to your taste.
  2. When chicken is cooked add vegetables to pan, cover allowing your vegetables to steam.
  3. When vegetables are tender, put chicken and vegetables in a casserole dish. Top with cheese sauce.
  4. Bake at 350 for 20 minutes.
  5. Cheese Sauce

  1. Melt butter in a small pot.
  2. Whisk in flour.
  3. Slowly add broth, whisking consistently.
  4. Once you have the consistency you like, add cheese, stirring to melt it.

Slow Cooker Bacon & Cheese Chicken

First thing first. Grab a napkin because you are going to drool. This was amazing! Bacon & Cheese Chicken but that’s not all. This is full flavor, full calorie (fair warning now!) and just amazing. There wasn’t a crumb left in my house. Hubby left the table wanting me to make it again, the girls wanting more.

Normally when I make something using a homemade recipe in the recipe I am sharing, I share it all. I use a homemade steak sauce, but you can use any steak sauce.

What you need:

  • 2-4 chicken breast
  • 12 pieces of bacon crumbled
  • 1/4 cup steak sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese

How to make Slow Cooker Bacon & Cheese Chicken:

I know this seems like an odd combination in flavors and I am not a big fan of ranch dressing either.

Place your chicken in your slow cooker, try to not layer them. If you layer them, they won’t get as much of the flavor in/on them.

Yes, you pour the sauce over the chicken breast, but I’m willing to bet that you figured that much out already. I’m sharing the above picture because I think its pretty, marbled like that.

Once your chicken has been cooking for 3-5 hrs on high or 7-8 on low, it looks like that. Not so pretty anymore, but smelling amazing! About 15-20 minutes before you are planning to eat, top with cheese, and then some crumbled bacon. I love the Hormel Real Bacon Bits… Blake must always have them on hand.

Bacon & Cheese Chicken

Are you drooling yet? I know I have been while typing this. This is Blake’s favorite meal, as it combines most of his favorite foods: ranch, cheese, bacon. These are not my favorite foods, out of those three I only really like bacon. BUT this chicken is delicious, moist and full of flavor, just don’t enjoy too much of it if you are watching what you eat, or attempting to eat healthier!

Prep Time: 10 minutes
Cook Time: 5 hours
Total Time: 5 hours 10 minutes

Ingredients

  • 2-4 chicken breast
  • 12 pieces of bacon, crumbled
  • 1/4 cup steak sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese

Instructions

  1. Spread the oil over the bottom of your slow cooker and place the chicken over top of it.
  2. Mix the steak sauce and ranch dressing together in a bowl and pour over chicken.
  3. Cook on low 7-8 hours. High 3-4 hours.
  4. About 15-20 minutes before serving add cheese to the top of the chicken, and then the bacon.
