Brownies

Chocolate Brownies

by Ashley Mullen Leave a Comment

I have been making these chocolate brownies since I started baking on my own. I grabbed the recipe when I moved out on my own an still make them. I’ve never been one for buying mixes from a store or anywhere else.

The icing I use, is amazing. It is just perfect.

What you need:

For the Brownies

  • 1/2 cup butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/3 cup cocoa
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Icing

  • 3 tbsp softened butter
  • 3 tbsp cocoa
  • 1 tbsp honey
  • 1/2 – 1 tbsp warm water
  • 1 cup icing sugar

How to Make these Brownies

I made these chocolate brownies just the other day when a chocolate craving hit. I had no chocolate stashed in my house, what kind of woman with three kids doesn’t have chocolate stashed somewhere?

Probably one (like me) who has willpower issues.

Grab your mixer, use your whisk attachment, and toss in your eggs and sugar to mix for a minute. Add in your butter, mix for a minute.

Add in the remaining ingredients and, of course, mix. Pour the batter into a greased 9X9 pan. Bake at 350 for 25-30 minutes.

Do you see just how great that edge looks. That is my favorite part of the brownie, and I’m sure I’m not the only one who feels that way.

While letting your brownies cool, make up your icing. This icing is my favorite, I don’t like canned, but I suck at making my own usually. This recipe though is rather fool-proof – this fool can make it!

That is honey you see above on the cocoa, I swear that that is the reason I love this recipe.

I also have to love that I can pour this over my brownies, and it will harden a bit, it will not drip off when you’re trying to eat them.

I have been making bread like crazy. I use the heat from my oven to help the dough rise and while it’s on I might as well bake right? That’s what these brownies are. Might as well make something good, if not healthy while the ovens on.

What you need:

  • 2 1/4 cup flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter softened
  • 1 1/4 cup white sugar
  • 1 1/4 cup brown sugar
  • 1 tsp vanilla
  • 3 eggs

How to make Vanilla Brownies:

Preheat your oven to 350.

Beat the sugars and butter together, then add your eggs and beat it some more. Make sure its mixed really well. Then add in the remaining ingredients.

You are going to be left with a very thick “batter”, almost like cookie dough. Press it into a 9×9 greased pan.

Bake for 35-40 minutes.

It is going to look like the following picture. It is going to be good enough to eat without added frosting… but you know your going to add it anyway. Right?

Vanilla Brownies - straight from the oven

They are going to drop just a little as they cool. But it just keeps all that frosting on the brownies instead of falling off.

I added chocolate frosting, because vanilla and chocolate. You could add which ever flavor you prefer though, maybe maple or vanilla?

If you are looking for more traditional brownies, I have chocolate recipes too, but then again I also have a recipe for lemon brownies, just in case you like things a little different. Out of the three, my family really seem to like this vanilla brownies.

Lemon Brownies That You Can’t Stop Eating

by Ashley Mullen Leave a Comment

I love lemon flavored… anything. I also love sweet everything. Lemon brownies are perfect! Nothing something I make often, mainly because I don’t make brownies that often, but also my waist line doesn’t need any brownies. Dispute all that, I have a collection of brownie recipes that we enjoy occasionally including the ever popular chocolate brownies, and less traditional vanilla brownies.

I also have another brownie recipe that I’ll have to share with you soon… like I might have to go make them now. But these lemon brownies will be all you need for now, trust me, and my increasing waist line, we now.

What you need:

For the Brownies

  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 tbsp lemon juice

For the Glaze

  • 1 cup powdered sugar
  • 4 tbsp lemon juice

How to make Lemon Brownies:

Mix cream together the butter, sugar and egg. I like to mix these for at least two minutes, it will lead to a much lighter batter.

Then add in the rest of the ingredients.

Lemon Brownies with Lemon Glaze

Pour your batter into an 8X8 pan that you have a sprayed with non-stick spray. Bake at 350 for 23-25 minutes.

Make the glaze up with lemon juice and powdered sugar, simple.

Let it cool before adding the glaze. Just pour it over the brownies. Your choice as to whether your remove the brownies first or not. I don’t because the pan keeps the glaze contained.

Lemon Brownies with Lemon Glaze

Slice and enjoy. But remember to share, even just one piece, heck, one bite, just so you can say that you didn’t eat them all yourself.

I hope you enjoy these brownies as much as we do. If you want to work on presention a little with these for serving at a meal, line your pan with parchment paper so you can lift the brownies out of the pan and onto a plate before adding the glaze.

I mentioned love for lemon flavors in the beginning so maybe you’re wondering what else I have that is lemon:
