Summer of Slow Cooker Meals

Have you ever been to Saskatchewan in the summer? It’s like living in an oven. A very hot, pre-heated oven. Which makes using the actual oven very uncomfortable, and our central air run like crazy. Which has led me to avoid using it as much as possible.

I am going to spend the summer using my oven as little as possible, like, not at all if possible. I guess this post also could have been called “How to Save Money in the Summer”.

With three different slow cookers, I really shouldn’t have a problem not using my oven. I know it seems crazy to have three slow cookers, but they are all different sizes.

The smallest (1 1/2 quart) was perfect when we were a family of 3-4 (little ones who don’t eat a lot). I’m quite sure that it moved West with us, this little slow cooker.

The medium sized one is new, but since I picked it up at the Salvation Army I’m not too worried. And it’s the perfect sized for making some chicken breasts.

My large slow cooker, it gets replaced regularly. I some how manage break them, a lot. It’s my most used, because it holds a lot. It is great for casseroles, and big enough for making hams, chickens, turkey and all that good stuff.

Homemade Bread

I do make our bread, usually from late September to mid May. Because then the weather is just too hot. I refuse to run the AC on the same day that I run the furnace and the house gets too warm.

Normally I switch to buying bread, and then listening to my son complain because he doesn’t like store bought bread. Instead managed to pick up a $10 bread machine.

A $10 bread machine is a whole heck of a lot cheaper than buying bread for this family, even for just a week. I had already decided to buy one for full price when I found mine.

Expect to see lots of new slow cooker recipes coming over the next few months (I gotta spread them all out some).

Homemade Bagels With or Without A Bread Machine

I love making homemade goodness for my family, baking, cooking and decor. I found a recipe at least a year ago for homemade bagels, boy was I excited, however, they were a lot more work than I was looking for. This is my version, ingredients changed and directions made so simple anyone can do it.

Homemade Bagels With or Without A Bread Machine

Homemade Bagel Recipe

Step 1:
Throw it all into your bread machine and set use it on the dough setting, usually about 1 hour 30 minutes.

  • 3 3/4 cups flour
  • 1 1/4 cups hot water
  • 1/4 cup butter/margarine (placed in the hot water)
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 tsp active dry yeast

*Continue to the recipe for instructions on making these without a bread machine.

Step 2:
When down knead it in your hands for a minute, trying to get all the air pockets out. Place on floured surface cut into 12 pieces.

Shape your pieces so that they are somewhat circular, then using your thumb make a hole in the center, you may want to stretch it a bit as it will become smaller as the dough rises and bakes. Cover for 10 minutes. Pre-heat your oven to 400F.

Step 3:
Place on a greased baking sheet, you may want to stretch the holes  a bit again, your choice, ours rarely have holes anymore, they taste the same either way. Bake for 17-20 minutes.

There are bagel molds that you can buy to get the hole in the center each and every time. I might buy on of these soon.

After awhile, I don’t worry about making sure they are the perfect shape, they are going to taste the same whether they have a hole in the center or not.

Prep Time: 15 minutes
Cook Time: 20 minutes
Inactive Time: 1 hour 10 minutes
Total Time: 1 hour 45 minutes

Ingredients

  • 3 3/4 cups flour

*If you do not have a bread machine, which I have had period of, you can still use this recipe to make bagels for your family. I take 15 minutes of kneading the dough, then let them rise for about 45 minutes to an hour. They still taste great just as great!*
