Apple Blossoms and Stars

Scrambled Egg and Apple

We really like apples here. They are always in our fridge, an easy, healthy snack, and they make a great healthy add in. I never thought about adding delicious apples to one of my lest favorite foods, eggs. Scrambled egg might be the perfect breakfast food but my kids and I are still working on liking them.

We have been experimenting a little with cooking and baking with apples like this apple coffee cake recipe, yum.

As I get older my tastes have changed a lot but I still don’t like eggs all that much. I have tried a lot of different recipes and types but they still are a no go… except I like these.

Scrambled eggs with apple, and a little cinnamon and sugar. I think it’s the sugar that makes the eggs bearable for me.

This is a simple, easy way to make eggs which is my favorite way to cook anything.

What you need:

  • 4 eggs
  • 2 apples – peeled and cut up
  • 1 tsp cinnamon
  • 1 tbsp white sugar

How to make Scrambled Egg and Apple:

Dice up an apple, with a Pam covered frying pan toss the apples in and start tenderizing them. After about five minutes sprinkle a little cinnamon and sugar over the apples, stir them around and crack eggs over them.

Now, if you are a great omelet maker/flipper, then by all means have a omelet. But if you’re like me and can’t flip a single egg then have some scrambled with me.

One day I forgot that I was going to be babysitting, therefore didn’t have anything “lunch” to feed all six kids. I made this and it has become a favorite with the kids I babysit and I have made it more often for them. A healthy and easy lunch idea.

Scrambled Cinnamon Apples and Egg

Yield: 4
Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes

Ingredients

  • 4 eggs
  • 2 apples - peeled and cut up
  • 1 tsp cinnamon
  • 1 tbsp white sugar

Instructions

    1. Dice up an apple.
    2. In a Pam covered frying pan toss the apples in and start tenderizing them.
    3. After about five minutes sprinkle a little cinnamon and sugar over the apples, stir them around and crack eggs over them.
    4. Once the eggs have cooked 3/4 ways done, flip! And you have the makings of an omelet. OR Scramble them when they are about 1/2 cooked, and continue to scramble them until cooked.

This would be an easy breakfast for your kids to make as well. Scrambled eggs in general are easy to make. Eggs and apple is just as easy to make for a sweet breakfast.

I have been enjoying eggs more and more, and the ease of making them. One of my favorite ways to enjoy them now is our egg and pepper cups that I make ahead of time for the week.

Apple – Peanut Butter Wraps

I was going through pictures this morning I came across the pictures for this, and couldn’t believe that I hadn’t shared this already. These apple peanut butter wraps are my girls favorite lunch. And they are perfect for Austin to take to school. Make sure to check out the other peanut butter and/or apple recipes that we have.

These wraps are super easy to make. Healthy, getting some protein, fruit and grains in. And, I find they are filling, though there is no filling my children.

Apple – Peanut Butter Wraps

What you need:

  • large tortilla
  • peanut butter
  • apple – sliced

How to make Apple – Peanut Butter Wraps

All you need is a (large) tortilla, peanut butter and an apple. Spread peanut butter over your tortilla, bringing it to the edge on one side.

Top with diced apple, with or without the skin still on. My kids know I don’t peel apples, and I rarely peel potatoes.

Now, roll it up. I tuck the ends in, then roll it up from the side. The edge/side you brought the peanut butter too, roll towards it. The peanut butter will keep it wrapped nice and tight acting like glue.

Now doesn’t that look good?! And it takes no time at all.

Hubby looks at us like we’re crazy when the girls ask for this. Apparently he doesn’t think it looks or sounds as great as it is. His loss.

My daughter’s school is NOT peanut free, in fact there is nothing that they aren’t allowed. At this time there are no allergies in her school… if there were, I would have no issues with it and she’d be taking something different to school, we are NOT going to risk anyone’s child.

UPDATE: We homeschool now so these are a staple in our house!

Quick Apple & Chicken Skillet

With a bag of granny smith apples in my fridge so sour that I can barely eat them with sugar and chicken breast thawing in my fridge I thought I’d experiment in the kitchen. I figured I’d make a meal we all love or we could have been eating peanut butter and jam sandwiches for supper instead. This Quick Apple & Chicken Skillet was the perfect meal, and one that is going into our meal planning rotation now.

What you need:

  • 2 boneless chicken breasts
  • 1 splash EVOO oil
  • 1 onion, chopped
  • 3 clove garlic, minced
  • 2 apples, cored and sliced
  • ¼ cup apple vinegar
  • 2 Tbsp honey mustard
  • 1 handful fresh sage leaves

How to make Apple & Chicken Skillet

Start with some oil in a pan, heat on medium-hot then add the chicken breast. Cook chicken breast for 5 minutes on each side, browning then nicely but not cooking them all the way through.

Remove the chicken from the pan to a plate, lower heat to medium and sauté a chopped onion and 3-4 minced garlic cloves for a few minutes then add 2 peeled, cored and sliced apples, 1/4 cup of cider vinegar, 2 tbsp of honey mustard, and a couple tbsp of fresh sage, chopped.

After about five minutes add chicken back into the pan with everything else. Cover with a lid tightly. Let it simmer at low-medium for 10-15 minutes or until chicken is fully cooked.

Remember, don’t go check your email while you are cooking. If you do, then yours will look be a little blacker than it should be. Like mine. While it was a little blacker than it should have been, it was still delicious. Like, OMG good. Hubby was very suspicious of it from the moment I peeled the first apple. But said, a little less burnt and it was definitely a make again meal.
