Easy Slow Cooker BBQ Meatballs

BBQ meatballs are always a hit in my house, it never fails that everyone will eat all there is, there will not be one leftover meatball in the house by the time the meal is over. They tend to be my go to when Gauge hasn’t been eating well at supper time, which is exactly why I dug out this bbq meatball recipe the other day.

Easy Slow Cooker BBQ Meatballs

Normally I would rather buy pre-made meatballs because I hate to touch raw meat, plus it makes the throwing something together that much easier and faster. However, one I didn’t have any pre-made in the freezer, and we are trying to eat a little healthier right now, so homemade meatballs it was, and wow, so great!

What you need:

  • 1 lb ground beef
  • 1/4 cup seasoned bread crumbs
  • 2 egg whites or 1 egg
  • 2 cups of onion divided
  • 2 tbsp Worcestershire sauce
  • 2 cloves of garlic minced
  • 1/2 cup BBQ sauce
  • 1/2 cup beef broth

How to make Slow Cooker BBQ Meatballs:

Toss together, your ground beef, bread crumbs, egg whites, Worcestershire sauce, 1 cup of thinly diced onions, and garlic.

Mix it really, whether with your hands, or with a potato masher like I use.

Form into 2″ balls. Set aside. I do wish I had thought to use my food processor for the onions in the meatballs, didn’t think of it until later.

In your slow cooker mix together BBQ sauce of your choice, beef broth, and the remaining onions.

Drop your meatballs into the sauce, give them a gentle stir to make sure they are fully covered in sauce.

Cook on low for 3-4 hours. Depending on how tightly you pack your BBQ meatballs together, they shouldn’t fall apart.

Enjoy with some delicious mashed potatoes, some veggies. Over some rice.

Hobo Chicken – All in One Kind of Meal

We are big lovers of this recipe, everything is cooked together in tin foil, all the flavors mingling, tastes amazing. It has taken a bit of time to figure out just how much to make, because, my kids really like it, I really like it, and I like to have leftovers for lunch the next day.

You can cook these in the oven, or toss them on the BBQ. This makes it perfect for the whole year. I personally prefer them on the BBQ, they get an extra smoky flavor that the oven just can’t beat.

What you need:

  • 4 Chicken breasts – cut into bite size pieces
  • 5 carrots – diced
  • 5 potatoes – diced
  • 1/2 cup bacon bits
  • 1 large onion – diced
  • 5 garlic cloves minced
  • salt and pepper to taste

How to make this Hobo Chicken meal:

Dice your veggies – potatoes, carrots, onions. Minced garlic – a lot. Dice your chicken. Try to cut things evenly, so that everything cooks evenly.

Lay out your tin foil. We cook about two servings in each piece of tin foil to give you an idea of how much is in each packet. Use a little butter to cover the bottom of the tin foil to prevent sticking.

Add in all the veggies, the chicken, garlic, and some salt and pepper to taste. Top with some real bacon bits.

Foil it over, sides and the ends to keep the steam and juices in.

Bake at 400 until cooked through, about 45 minutes.

Make sure your chicken is cooked when you check it, we don’t want anyone to get sick from this delicious hobo chicken recipe.

Hobo Chicken - All in One Kind of Meal

Yield: 8
Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 1 hour 5 minutes

One in one meal that you can make over your BBQ or in the oven.

Ingredients

  • 4 Chicken breasts - cut into bite size pieces
  • 5 carrots - diced
  • 5 potatoes - diced
  • 1/2 cup bacon bits
  • 1 large onion - diced
  • 5 garlic cloves minced
  • salt and pepper to taste

Instructions

  1. Drop of butter onto tin foil. Add in servings of all the above mentioned. Fold over the tin foil to make a pouch.
  2. Bake at 425 for about 45 minutes or until done. You could also toss onto the BBQ in the summer.

I am still stuffed from our delicious Thanksgiving dinner, all homemade delicious food. My husband made the most delicious turkey! This turkey recipe gave us a turkey that was juicy, and had an amazing flavor. It was the best turkey we have ever had!

I had my heart set on a slow cooker turkey, which is what we had last year, when the element in my stove went three days before Thanksgiving. We got really lucky that the turkey we had bought fit into my six quart slow cooker.  We had planned on using the same method but, that little turkey we bought, it didn’t fit in my slow cooker this year.

Now, while we did end up using the oven this year, this is turkey recipe is amazing and makes a delicious baked turkey in both the oven or a slow cooker.

What you need:

  • 2 ” peeled, fresh ginger
  • 2 oranges, quartered
  • 2 onions, quartered
  • 4 carrots
  • Poultry seasoning

How to make this turkey recipe:

Put the carrots in the bottom of your roaster, under your turkey. One of the oranges, onions, and bulbs of garlic go inside your turkey. The rest place around it.

Low and Slow Turkey Recipe

Add poultry seasoning (this one is freeze dried, and amazing) to the top of your turkey, generously.

Cook until the temperature of your turkey is 165 degrees. Our turkey took 3 hours in the oven at 350. Uncovered until it started to brown. Once it started to brown, make a tin foil tent for the remaining time it is baking.

Baste every 30 minutes.

You are going to cook your turkey for 15 minutes for every pound of turkey.

A whole turkey is safe when cooked to a minimum internal temperature of 165 °F as measured with a food thermometer. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast.

Yield: 1 turkey
Prep Time: 20 minutes
Cook Time: 4 minutes
Total Time: 24 minutes

Cook this turkey in the oven or a slow cooker. A moist, flavorful turkey.

Ingredients

  • 2 " peeled, fresh ginger
  • 2 oranges, quartered
  • 2 onions, quartered
  • 4 carrots
  • Poultry seasoning

Instructions

  1. One orange and one onion stuffed inside the turkey.
  2. Arrange carrots under the turkey and lay the remaining onion and orange around the turkey.
  3. Sprinkle seasoning and ginger over the top.
  4. Cook in slow cooker for about 6-8 hours on low.
  5. Cook in oven at 325: 15 minutes for every pound.

In the slow cooker on low for 6-8 hours. Once cooked, if you like the crispy skin, remove and broil until crisp. Do NOT baste if you are using your slow cooker, you don’t want to uncover or you are letting the heat out, which is going to slow down your cooking time.

Two Ways Honey Garlic Meatballs

There is one meal that my kids are all guaranteed to eat, and that meal is meatballs. It doesn’t matter what kind, but these honey garlic meatballs have had the best reaction from my own whole family. It doesn’t matter whether or not they are cooked in the oven or the slow cooker, they are still going to taste great!

This is a simple recipe, leaning on the side of frugal, the most expensive thing being the darn meatballs themselves because I don’t like to handle raw meat, plus these save a lot of time for you. I buy a bag of meatballs from Walmart or get them from Costco.

What you need:

  • 3 tablespoons brown sugar
  • ⅓ cup honey
  • ½ cup ketchup
  • 2 tablespoons soy sauce
  • 3 cloves garlic minced
  • 28 oz. fully cooked frozen meatballs

How to make Honey Garlic Meatballs Sauce

Toss your meatballs into your slow cooker or casserole dish.

Mix together the honey, soy sauce, ketchup, brown sugar and garlic. Tip don’t use brand name ketchup for cooking like this, instead get the store brand and save a little money, plus there really isn’t a taste difference.

Pour over your meatballs, stir it around a bit.

Either cook them in your slow cooker or in your oven:

Slow cooker – low for 3-4 hours.
Oven – in a covered casserole dish at 30 for 45 minutes.

Either way you chose to cook them, they really don’t take long to go from the freezer to your plate. Especially when using pre-made meatballs, which makes these a great meal to serve to your family during the week.

Personally I prefer to make these in my slow cooker. The reason behind this is because then the meatballs really take on the honey garlic flavor from the sauce.

These honey garlic meatballs are definitely a family pleaser.

Cook Time: 3 hours
Total Time: 3 hours 5 minutes

Ingredients

  • 3 tablespoons brown sugar
  • ⅓ cup honey

Simple BBQ Breaded Chicken

Are you ready for an easy, super frugal meal? This is simple to make, requires only three ingredients to make this breaded chicken. Two simple, cheap ingredients and chicken breasts (which I realize aren’t all that cheap!).

As I said, simple. Start with two shallow bowls, one with bread crumbs, one with your BBQ sauce of choice. I lucked out a few weeks back and Walmart had Kraft BBQ sauce on sale for 50 cents each, I grabbed a few.

I cut my chicken into chunks to make them easier to work with and so they would cook faster. Pat your chicken dry or the BBQ sauce isn’t going to stick. Cover a baking sheet in tin foil and coat with non-stick spray.

Start with the BBQ sauce, drag your chicken through it to coat. Then coat in bread crumbs. Lay on your baking sheet. Repeat.

Bake at 400 for 15-20 or under cooked. The size of your chicken pieces will determine how long it takes to cook.

Despite how it looks here, they didn’t stick at all. And just lightly crisp around the edges. This breaded chicken was super tasty, and three of my kids love it!
