Pancake Mini Donuts for Breakfast

When food is fun, everyone wants to eat it. And when it’s easy to make, moms have no problem making fun food for their kids. These pancake mini donuts are fun and easy to make for breakfast, or for lunch.

I don’t know about you, but I hate trying to flip pancakes. I haven’t made pancakes in almost two years, which I just this minute realized because our gridle broke and we have stainless steel pots and pans and I’m not sure how to keep pancakes from sticking in them.

What you need:

  • 2 eggs
  • 2 cups of flour
  • 1 tbsp brown sugar
  • 1/2 cup melted butter
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1 3/4 cup milk

What you need for the glaze:

  • 1/4 cup of melted margarine or water
  • 3 tbsp milk
  • 1 tbsp honey
  • 2 tsp maple extract
  • 2 cups powdered sugar

How to make Pancake Mini Donuts for Breakfast

How do you make these? Simple.

Mix together your butter, egg, and sugar. Mix until smooth. Then add the baking powder and salt. alternate between adding in flour and milk.

Making Mini Donuts

I ended up buying a handy batter dispenser recently for making my mini donuts because we were going through Ziploc bags like crazy around. You can of course use a Ziploc bag as a piping bag, or an actual piping bag to easily fill your mini donut pan.

Now the best part about using a mini donut maker is that you preheat it, fill the mold, close it until the green light turns on. Remove and get ready to serve them.

Now how are you going to serve your pancake mini donuts? You could top them with a little syrup, and then cut into you donuts, which kind of doesn’t seem donut like. OR you could top them with some glaze.

Making the Glaze

Simple to make because first thing in the morning no one wants to be thinking hard.

Mix all the ingredients together in a bowl, whisk until smooth.

These pancake mix donuts are best served right away. Store leftovers in an air tight container.

Cook Time: 10 minutes
Total Time: 15 minutes

These pancake mini donuts for breakfast are a fun way to have breakfast every once in awhile.

Ingredients

Pancake Mini Donuts

  • 2 eggs
  • 2 cups of flour
  • 1 tbsp brown sugar
  • 1/2 cup melted butter
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1 3/4 cup milk

Maple Glaze

  • 1/4 cup of melted margarine or water
  • 3 tbsp milk
  • 1 tbsp honey
  • 2 tsp maple extract
  • 2 cups powdered sugar

Instructions

    1. Mix together your butter, egg, and sugar.
    2. Mix until smooth-ish.
    3. Then add the baking powder and salt. alternate between adding in flour and milk.
    4. Mix until smooth, no lumps.
    5. Pour into either your piping bag or pancake batter dispenser.
    6. Pour little bits into the donut molds.
    7. Cook until the light on your donut maker says they are finished or until golden brown and cooked through.
    8. While your donuts are cooking, mix up the glaze.
    9. Dip the donuts in the glaze and set aside for breakfast. Best enjoyed while still warm.

Chocolate Chip Baked Oatmeal

It’s first thing in the morning and you realize you have nothing in the house for breakfast because yesterday was grocery day and something came up that you couldn’t get shopping. Or maybe, you just want to try something different for breakfast. This is it. Chocolate chip baked oatmeal, sweet and delicious, but filling and full of energy for you and your kids.

This is super easy to make. You can make this with your eyes half open as you are gulping down your coffee. Which is how I did it, and everyone loved it, even my oldest who isn’t the biggest oatmeal fan.

What you need:

  • 3 cups quick oats
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup milk
  • ½ cup butter, melted
  • 2 eggs
  • ¼ to ½ c. semi-sweet chocolate chips

How to make Chocolate Chip Baked Oatmeal

Add all ingredients minus the chocolate chips into a bowl. You don’t need to use a mixer, there is nothing hard about mixing this together, I was just being lazy and drinking coffee.

Once the oats and everything is mixed together, add in your chocolate chips. Mix just enough to mix them in.

Spread into a greased 9X9 baking pan.

Bake at 350 degrees for 30-35 minutes or until edges are lightly browned and center is set.

Prep Time: 3 minutes
Cook Time: 30 minutes
Total Time: 33 minutes

An easy alternative to instant oatmeal in the morning, this chocolate chip bake oatmeal only takes minutes to put in the oven.

Ingredients

  • 3 cups quick oats
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup milk
  • ½ cup butter, melted
  • 2 eggs
  • ¼ to ½ c. semi-sweet chocolate

Instructions

  1. Mix all ingredients together, minus the chocolate chips.
  2. Once all ingredients have been mixed, fold in chocolate chips and pour into a greased 9X9 pan.
  3. Bake at 350 for 30-35 minutes or until edges are lightly browned and center is set.

Notes

You don't have to use chocolate chips, or not just chocolate chips even. You could use other add ins to make it a healthier breakfast for your family. some add ins could include:

  • raisins
  • apple, diced
  • banana, chopped
  • blueberries

You could try it topped with fruits such as strawberries, blueberries, raspberries or peaches, or maybe a little homemade jam. I'm drooling now.

Cinnamon Roll Bundt Cake

I use this site as my personal recipe book. Which is why I was surprised that this recipe wasn’t already on here. I have been making this for too many years to remember. I often make this cinnamon roll bundt cake around Christmas time. It serves as a dessert, or for our Christmas morning breakfast.

You can use any recipe for cinnamon rolls you like, use your favorite one. I have never tried using Pillsbury cinnamon rolls so I can’t say if they would work or not, but I don’t see why not, as long as you watch how long you bake them.

I have included my recipe for cinnamon rolls here too, and instructions on baking them as well because they are great on their own too.

Making Cinnamon Roll Bundt Cake

After mixing all the dough ingredients together, and letting it rise in a warm place for an hour, you get the fun of rolling out your dough, this is the only part I don’t like doing, and usually in list in my husband to do for me, as he is the one that typically wants me to make this in the first place. You gotta work for it honey!

I always melt my butter and then spread it over the dough with a pastry brush because it’s easier. Sprinkle the brown sugar and cinnamon over the melted butter.

Roll them up, and slice them. I use my bread knife which keeps my cinnamon rolls in a nice shape and not flattened on the bottom.

Line them up on a cookie sheet to rise for another half hour in a warm place. Preheat your oven for 350.

Grease your bundt pan really well, you don’t want these to stick. Start lining your rolls around your pan.

Bake for 15 minutes until the cinnamon rolls are brown, you want to make sure they are cooked through. Let them sit for a few minutes before carefully flipping your bundt pan over onto a plate and gently shaking to get the cinnamon rolls to release from the pan.

Let them cool a bit, but all the way. While they are still a bit warm but no longer hot, spread your frosting, or cream cheese or what have you over the top.

Cinnamon Rolls

Yield: 20
Prep Time: 30 minutes
Cook Time: 15 minutes
Rising Dough Time: 1 hour 30 minutes
Total Time: 2 hours 15 minutes

Cinnamon roll recipe that I use to make my cinnamon roll bundt cake, but you can use to make either the cinnamon rolls or the cake.

Ingredients

Cinnamon Roll Dough

  • 4 cups all-purpose flour
  • 1 cup milk, warmed
  • 1 tbsp yeast
  • 3 tbsp margarine, melted
  • 1 tbsp white sugar, for using to active yeast
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp ground cinnamon

Cinnamon Roll Sugar Filling

  • 1 cup brown sugar
  • 2 1/2 tbsp ground cinnamon
  • 6 tbsp butter, melted

Instructions

Cinnamon Roll Dough

  1. Warm milk in the microwave milk for 45-60 seconds. It should be warm but not hot to the touch.
  2. Place milk into the bowl of your standing mixer, then add 1 TBS sugar and 1 TBS yeast to the warm milk. Stir and let it sit for five minutes or until it becomes foamy.
  3. Add the ½ cup sugar, butter, eggs, and vanilla to the mixture in the bowl of your standing mixer. Use a dough hook to stir until combined.
  4. Add 4 cups flour, salt and cinnamon and stir the dough hook, starting on low and increasing to high.
  5. Knead dough in the standing mixer until a large ball is formed. The dough should be smooth and only slightly tacky to the touch. If the dough seems too sticky and is not forming a ball, add more flour 1 TBS at a time until a smooth ball is formed.
  6. Grease a large bowl and place the dough inside.Cover the bowl with a warm, damp towel and put the bowl in a warm place to rise.
  7. Let the dough rise in a warm place about 1 hour or until dough has doubled in size.

Assemble Cinnamon Rolls

  1. Sprinkle a large work surface with flour. Roll the dough into a 24x12” rectangle, about 1/4 inch thick.
  2. Melt butter. Mix together brown sugar and cinnamon in a bowl.
  3. Spread butter over dough with a pastry brush, and then sprinkle brown sugar and cinnamon over the dough. This way is so easy.*
  4. Roll up dough cut into 12 equal sized rolls (feel free to measure and cut each roll to be 2” long).
  5. Line them up on either a grease cookie sheet or a cookie sheet lined with parchment button. Give them space to rise.
  6. Cover and place in a warm place for 30 minutes. Preheat oven to 350.

If Making Cinnamon Rolls

  1. Bake for 15-20 minutes. Check them often.
  2. Once baked add a cream cheese or icing topping while they are still a bit warm.

If Making Cinnamon Roll Bundt Cake

  1. Grease you bundt cake pan really well.
  2. Move your cinnamon rolls from the cookie sheet where they were rising and start placing them in your bundt pan, over lapping the row below.
  3. Bake for 15-20 minutes. The top cinnamon rolls should be quite brown, so bake for a few more minutes if needed.
  4. Let rest for a few minutes before flipping upside down onto a plate or cake stand.
  5. While they are still warm spread frosting of some kind over the top and down the sides.

Notes

*Alternately you can mix together the melted butter, cinnamon, and brown sugar before spreading it over the dough but I find this harder and more time consuming.

Slow Cooker French Toast Casserole

This slow cooker french toast casserole came along because I was testing out cooking bread in my slow cooker the other evening. It cooked really well, fell a bit flat to baking it in the oven but my house didn’t get heated up like it does when running the oven. The problem was, I took it out of the slow cooker to cool and then forgot about it. Talk about hard bread.

I hate to waste food, so a hard loaf of bread meant I needed to figure out something to do with it because my kids were going to be waking up and wanting breakfast. I had seen french toast casseroles on Pinterest before and figured why not try something to “save” the bread.

I did pop it into the microwave for 30 seconds to make it a little easier to cut, it was hard, like break a window hard. I cut it up into chucks, and tossed it all into the my large slow cooker.

Mix together your eggs, milk, vanilla, and maple syrup in a bowl.

And here is where it gets really easy, pour this over the bread. Give it a stir, and cover it.

I set mine on high for two and a half hours.

Please, please, spray your slow cooker with a non-stick spray, or wipe it down with butter/margarine or something. I forgot. It stuck, it stuck badly. It took a good soaking, and scrubbing to get my slow cooker clean.

My kids wanted more syrup on their french toast so they got more. They loved it! I liked it too.

Slow Cooker French Toast Casserole

Yield: 4
Prep Time: 10 minutes
Cook Time: 3 hours
Total Time: 3 hours 10 minutes

Ingredients

  • 1 loaf of crusty bread
  • 6 eggs
  • 1 cup of milk
  • 1 cup maple syrup
  • 1 tbsp of vanilla

Instructions

  1. Grease your slow cooker pot very well.
  2. Cut up your bread and toss in the slow cooker.
  3. Mix together your eggs, milk, maple syrup, and vanilla.
  4. Pour over the bread, give a stir to cover the bread.
  5. Cover and cook on high for 2-3 hours.

Easy Homemade Sandwich Bread

I make all the bread that our family consumes, at least 3 seasons on the year, and it is definitely saving us money, and in the winter the heat from the oven adds an extra bit of heat to our home. This sandwich bread is our favorite recipe for bread that doesn’t require a bread machine. There is just something about homemade bread coming out of the oven.

I had another bread recipe that I used up until now, and it was great, but I was trying to find a way to cut back on the grocery bill, and that recipe used a lot of ingredients. The recipe that I am using now only has four ingredients which fits our budget so much better and makes it easier to make in the long run.

Easy Homemade Sandwich Bread

What you need:

  • 1/4 c canola oil
  • 1 tsp white sugar
  • 1 1/2 tbsp yeast
  • 2 3/4 cup water
  • 6 1/2 cup flour
  • 1 tsp salt

How to make easy sandwich bread:

Yeast, warm water, and sugar. Make sure your water is warm, not too hot or you’ll kill the yeast, too cold and it won’t react. I only use a cup of water at this point, and then let it sit for abut 5 minutes until the yeast is all foamy.

Toss in the remaining water, oil, and three cups of flour, oh and toss in some salt as well. Mix, cover and let it sit for about 10 minutes. It will get a bit bubbly. Add in the remaining flour and mix it well. I use my mixer with a dough hook, and mix until the dough becomes a ball of dough around the hook.

Remove from the bowl and place into another, but greased bowl. Cover, I cover with a piece of parchment paper and them a dish towel, that way the dough doesn’t stick to the towel as it rises. Let it rise in a warm spot for an hour, then divide it into your loaf pans.

It you want to make two large loafs of this sandwich bread, divide it into two, I divide it into 3 medium sized loafs. Let it rise for another hour, and then bake at 350˚ for 30 minutes.

Cook Time: 30 minutes
Total Time: 2 hours 50 minutes

Ingredients
