Single Serve Cookie Oatmeal

I can easily forget to make myself breakfast at least three days a week. I just don’t think of it for myself but I make sure my kids always eat. Life as a parent am I right? This single serve cookie oatmeal makes the later breakfast worth it. It only takes a few minutes to throw together and cook in your microwave. Single serve recipes have really become my favorite.

I love single serve desserts, usually making myself one when the kids have gone to bed and it’s been a long day or a long week. So why not turn single serve recipes into something I can enjoy in the morning without feeling guilty.

What you need:

  • 1/4 cup flour
  • 2-3 tbsp sugar
  • 1/8 tsp baking soda
  • 2 tbsp quick oats
  • 3 tbsp coconut oil
  • 1 tbsp almond milk
  • pinch of salt
  • 1/4 tsp vanilla – optional
  • 1-2 tbsp chocolate chips – optional

Single Serve Cookie Dough Oatmeal

Mix the dry ingredients in a microwave-safe bowl or large mug. Add in wet ingredients and mix well. It doesn’t look all that appetizing I know, but looks can be very deceiving in this case.

Microwave for 45-60 seconds. Spread some chocolate chips on the top, microwave for a few seconds more to melt if you’d like a little extra on top. You really will enjoy this recipe without any chocolate chips if you want to cut them and the sugar that comes with them out.

The coconut oil gives this single serve cookie oatmeal the best flavor. Just the best. If you like coconut.

Oatmeal is to be really good for you, it’s filling and when mixed together with the right things, so delicious. I like instant oatmeal packages but I don’t love all the sugar that is in them. This is just as quick to make, and in my opinion much tastier.

I bought some microwave and oven-safe bowls with lids so I can toss together the dry ingredients in a bowl and just add in the wet and microwave it in the morning. Putting my bowl near the coffee maker is the best way to remind myself to have breakfast.

Single Serve Cookie Dough Oatmeal

Yield: 1
Prep Time: 2 minutes
Cook Time: 1 minute
Total Time: 3 minutes

Single Serve Cookie Oatmeal for breakfast or lunch.

Ingredients

  • 1/4 cup flour

Iced Tea for a Hot Day
