Single Serve Chocolate Chip Cookie

Sometimes, you just need a treat. A pick me up. Something sweet to end the day with while you watch tv or read a book. You could also make this to share if you feel like being a really nice person. Or feel no guilt and enjoy it all by yourself. This single serve chocolate chip cookie is easy to make though it does take a little longer to cook than my typical single-serve recipes.

Here’s a little something I haven’t shared: I have been reducing the amount of sugar that I eat. I want to be healthier, these times are scary and I want to be in my best health just incase. So I have been treating myself to a little treat once a week.

This single-serve chocolate chip cookie is HUGE. I shared it with my husband. I ate less sugar and he thought I was being sweet and sharing with him. Nice huh?

What you need:

  • 2 tbsp butter or margarine
  • 3 tbsp brown sugar
  • pinch of salt
  • 1 tbsp of egg OR 1 Coturnix quail egg
  • 1/4 tsp vanilla extract
  • 1/8 tsp baking soda
  • 1/3 cup flour
  • 3 tbsp chocolate chips

How to Make Single Serve Chocolate Chip Cookie

Grab a microwave-safe mixing bowl, it doesn’t have to be very big. Place butter or margarine and heat so the margarine is partially melted, not fully melted.

Add in brown sugar, a pinch of salt, vanilla, baking soda, egg. Mix well.

I use quail eggs now. Because I have a huge supply of them, and one Coturnix quail egg is 1 tablespoon of egg. Perfect for me. However, you can also use a chicken egg. Beat your egg in a separate bowl and take one tablespoon for your recipe. You can put the rest in the fridge for later use… like another cookie, or for eggs in the morning.

Add in flour and mix until it is completely combined. it is going to look like any chocolate chip cookie dough you have made before. Able to roll it into a ball for the perfect cookie shape.

Mix in chocolate chips, I kind of fold the dough around them to mix them in the best.

Form into a ball. Flatten your cookie to about 1/2-1 inch thick. Thicker – slow cooked/chewy cookie. Thinner – crunch cookie.

I used my air fryer to make this cookie, so I laid a piece of parchment paper in the bottom. If baking in the oven you can use parchment paper on your cookie sheet or spray it with non-stick cooking spray.

Bake at 350 for 12-14 minutes, or use your air fryer to bake it at 350 for 12-14 minutes. Cook it more or less depending on how you like your chocolate chip cookies.

I like mine crunchy, my husband, Blake likes his chewy.

I just love to treat myself once a week, once the kids go to bed. Like a reward for keeping everyone alive and well, feeding them, teaching them all week.
