For Austin’s party with her friends, I made a chocolate and vanilla cake. Her theme was PINK. Everything was pink: her cake, her dress, the decorations, you name it, and I found it in pink for her.

This is the easiest recipe for a vanilla cake that I have been able to find which is why I stick with it. Why mess with what works? The beauty of this recipe is that you can use it for a cake as I did for her birthday, or you can use it to make cupcakes, which I normally do for birthdays but the birthday girl wanted cake.

Here is my vanilla cake recipe.

Ingredients:

  • 1 cup white sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 2 tsp vanilla
  • 1 1/2 cup vanilla
  • 1 3/4 tsp baking powder
  • 1/2 cup milk

How to Make A Simple Vanilla Cake:

Preheat your oven to 350.

Cream together eggs and sugar, and mix for a couple of minutes. Add in butter, vanilla, and baking powder.

Add in flour and milk, and mix thoroughly.

For the cake – use two 9×9 pans and bake for 30-40 minutes until set in the center and the toothpick comes out clean.

For cupcakes – fill 3/4 full and bake for 20-25 minutes until the toothpick comes out clean. I recommend using these cupcake liners, not only are they great for preventing sticking, there will be less garbage, and these ones are fun colors.

Birthday Cake Toppers

I tend to go a little overboard on birthdays because it was just the five of us for a long time. I didn’t want my kid to feel like they were missing out on anything, and you know mom-guilt, it is strong and overwhelming.

I don’t go overboard with gifts, but the whole day is about them. What they want for breakfast, lunch and a special supper. Each of them has specific suppers that they always chose.

I try to find fun cake toppers that match the theme that they have chosen for their party, one year Austin’s theme was “pink”, the cake in this picture was from that year. It was probably the easiest party to shop for.
