Fiesta Lime Chicken

This was a late afternoon meal idea. I’m really great at working under pressure! This chicken is proof of that. But it doesn’t have to be a last minute deal. This can be planned out the night before, or you can freeze your chicken breast in the marinade.

It’s really simple to make. Mix your vegetable oil, lime juice, salt, paprika, oregano, onion powder, cumin, and garlic powder.

Place your chicken into a large Ziploc bag, I only use *Ziploc brand, because I’ve clean messes after making this kind of meal with other brand bags. Not fun my friends, not fun to clean out of a fridge with wire racks either. The link is to the actual ones I buy, and yes, I buy a 3 pack each time, cheaper and saves me time and keeps me from running out.

Pour your sauce over the chicken, seal and refrigerate, or freeze for later.

The one thing to remember is that, the longer you marinate the chicken in this, the stronger the lime flavor. I didn’t marinate mine that long, mainly because of time, but also my kids aren’t huge fans of lime (or lemon flavoring).

Cooking wise, I put a little EVOO in the frying pan, dropped my chicken breasts in, cook them for 8-10 minutes on one side, flip and do the same on the other. Cook until no longer pink, and juice run clear.

Feel free to grill it on your BBQ, the outside grilled taste will just add to the flavors.

I am really bad for over cooking chicken for fear of under cooking it. The juices running clear means its done, and juicy. And delicious.

Ingredients

  • 3/4 cup vegetable oil
  • 1/2 cup lime juice
  • 1/2 tsp salt
  • 1 tsp paprika
  • 2 tsp oregano
  • 2 tsp onion powder
  • 1 1/2 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Mix together. Dump into a ziploc bag, add chicken breasts and marinate.
  2. Marinate for 2-24 hours, or even freeze the chicken in the marinate.
  3. Grill, or pan fry until cooked through.
