I love food that is
kinda healthy but looks completely bad for you. Because brownies or bars are bad for you. But Peanut Butter and Jam Bars are sorta good for you, everything a BP & J sandwich has, plus you know a bit extra sugar, and we could all stand to be a little sweeter. 😉 We all love these, Hubby included. You probably won’t want to make these all that often, or eat too much of it. But boy oh boy are they good.
Peanut Butter and Jam Bars

I came across a recipe similar to this a while ago. I scribbled down the recipe but never got around to making them. Recently I came across my scrap of paper, only I edited it to fit my wants for a lack of a better word, and made these just in time to have for lunch one day.
Start by mixing together the eggs, brown sugar and butter. Add in the baking powder, vanilla, flour and then the peanut butter, we buy Kraft 25% less fat smooth, it’s become the only stuff my daughter call good, and she is a peanut butter lover just like her Momma.
Press 3/4 of the peanut butter mixture into the bottom of a 9 x 9 pan. I left the edges a bit higher so the jam doesn’t run off and stick to the sides.
Spread jam over the peanut butter layer, or a layer of chocolate or hazelnut spread.
The remaining peanut butter becomes a crumbled layer over the top.
Bake, allow to cool… ours always end up in the freezer trying to get them to cool faster.
Cut, serve and enjoy.
It is 10:30 at night but I want to go into the kitchen and make this, right now.
I have also made these with No Name Chocolate Hazelnut spread. It is so much better than Nutella (which I don’t like) and cheaper too!
- 1/2 cup butter
- 2 eggs
- 1 1/4 cup brown sugar
- 1 tsp vanilla
- 3/4 tsp baking powder
- 2 cup flour
- 1 1/4 cup peanut butter
- 3/4 cup jam of your flavor choice
- Mix together working your way down the ingredient list minus - the jam.
- Spread jam 3/4 of the mix into a greased 9X9 square pan.
- Spread jam over the mix.
- Crumble the remain peanut butter mixture over top.
- Bake in a preheated oven (350 degrees) for 30 minutes.
