Lemon Loaf Cake

As I typed out the title of this post, my mouth filled with saliva. Have I mentioned that I have been losing weight because we stopped baking all the time?! No? Well this lemon loaf was a big NO NO in that weight loss. If you make it, make sure you have someone or multiple someones to help you eat it. Unless you have willpower and can control what you put in your mouth, I can’t.

A few weeks ago the mom of one of the children I watch bought a snack for everyone, lemon something or other. Delicious! OMG it was good. I mean, better than what I am about to share with you, but I don’t think it was cake, and it may have had a few more calories than this recipe. Hmmm, maybe I’ll ask for the recipe today at pick-up if I can remember. Anyways…

  • 1/3 c margarine
  • 3/4 c sugar
  • 2 eggs
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1/2 c water
  • 2 tbsp lemon juice

Mix and bake at 350 for 55 minutes.

Cream you margarine, eggs and sugar together.

Add your remaining ingredients. Add the water last adding it in slowly.

While you’re waiting on it to come out of the oven start your glaze. This was the easiest glaze I have ever made.

How simple was that?
Wait for the loaf to cool, about 10 minutes, before pouring on your glaze.

I did the calories up for my ingredients, with 12 slices, it was about 200 calories each. I think it was worth the extra time needed on the treadmill or whatever form of exercise you may do. What do you think?
