Chocolate Chip Banana Muffin Goodness

Since moving to SK we have had more bananas in the house than any other fruit, and they are lasting long before they are being eaten, I have to hide them in the cupboards so they last more than a day. My kids would eat bananas all day long nothing but bananas if I let them. I managed to keep a few to ripen to make some chocolate chip banana muffins.

  • 3 ripe bananas
  • 3 tbsp oil
  • 1/2 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup chocolate chips, I use semi-sweet

Mash the bananas, add oil, egg and sugar, mix well, you can use a mixer. Add vanilla, baking soda, baking powder and flour. Looking good?

Make sure to grease your muffin tin (I usually forget for the first couple I fill) and add about 1/4 – 1/3 of a cup to each spot.

Bake in a preheated oven at 350 for 12-15 minutes.

Yum, right now, writing and uploading these pictures, I wish I had some more ripe bananas to make a bedtime snack.

I think the girls enjoyed these as much, if not more than the actual bananas, I know I did. Next on the “ripe banana” to make list: banana bread. I haven’t made one in years! Hubby is looking forward to having one so I’ll have to time it with when he is home from working away.
