From Scratch Stir Fry Sauce

I want to re-share a delicious recipe with you all. From scratch stir fry sauce. No more running out to the nearest store for one of those little packages or, in my case, asking Hubby to pick one up on his way home. Instead, grab these 7 everyday ingredients and make your own.

Make sure you have a large jar (with lid) handy. Or empty something, I finished of the last of the jam. Peanut butter and jam sandwiches for lunch here once again.

Throw all the spices and cornstarch into your jar, add the vinegar, soy sauce and broth of your choice. Shake well. Once you sit it down, it will start to settle, just shake it again and all is good. Take it from me: BEFORE shaking make sure the lid is on. Otherwise you end up with stir fry sauce all over your cupboards, drawers {which don’t close tightly} and your clean floor.  [Read more...]

Homemade Pancakes

We don’t eat pancakes very often, but when we do have them, I make them from scratch. Fluffy, light, and filling. With chocolate chips, fresh or frozen berries… maple syrup. Good thing I just ate or I’d be raiding the freezer right now.

The other morning I got a craving for pancakes, and set out making them. With just me and the girls home to eat them, I froze the remaining ones for another morning. My recipe gives me 18 medium sized ones, the girls usually eat one each. I put them into freezer bags and froze. Which worked out great because Sunday morning as I sat down with my breakfast, guess what Hubby decided he wanted?

Cheesy Chicken and Bean Casserole

I’ve been cooking meals that are cleaning out the cupboards, fridge and freezer again. Without Hubby home to help eat all the food, it’s taking longer to consume it all. Trying to be inventive, using up stuff and still making something the girls will eat. Not an easy combination. However, this casserole, was amazing! Both girls liked it, Brookland came back asking for more.

It was super easy.

I cut up a chicken breast into bite size pieces, seasoned them with some spices, I used Everyday Style Mixed Pepper and Garlic seasoning (shameless self promoting, but it taste amazing!). I fried in in some olive oil until completely cooked. [Read more...]

Sticky Finger Squares

Looking for a sweet treat that requires no baking? Sure you could have the some what healthier version that include dried berries, and if you are planning on sharing with children, maybe you’ll want to stick to that one. But me, I want the chocolate, and crunch. These squares are unlike any I’ve ever had or made.

Take another look at the title, Sticky Finger Squares, this should tell you that it is very, very hard to sneak a piece or bite. I tried hard, thankfully it seems like wipes are always in reach so I could clean up quickly before I got caught. {And I wonder why my jeans might not be a loose as they were?!}

Slow Cooker Triple Chocolate Peanut Butter Cake

Oh my goodness this was … words can’t describe. Delicious chocolate, creamy taste of peanut butter, simple and ready for the end of your meal. This is going to be part of our late Valentine’s day supper. Brookland, no word a lie, licked her plate! While we laughed, I know I thought about it and Blake was quick to get another piece for himself. Slow cooker dessert at its finest.
