Easy to Make Breakfast Muffins

I thought I’d have a slight change in pace the other day and started looking up oatmeal muffin recipes and breakfast muffins recipes. I couldn’t find exactly what I wanted to eat because I wanted chocolate to be honest. So I threw a bunch of things together and enjoyed eating the end result, these breakfast muffins.

I always get up earlier than my kids by at least an hour and a half. It’s my time to enjoy my coffee and breakfast. It’s my me time to read a book, scroll through Facebook, or even, after that first cup of coffee is in me, to work on my sites.

I tend to be a creature of habit in the morning, it’s too early to fully thinking until I’m finished a cup of coffee. Normally breakfast around here is toast, a bagel, cereal, or oatmeal. Easy, and my kids can make these for themselves on their own.

  • 1 1/4 cup of oats
  • 1 1/2 cup of flour
  • 1 1/4 cup of water
  • 4 tsp of baking powder
  • 1 egg
  • 1/2 cup of unsweetened applesauce
  • 3/4 cup of brown sugar
  • 3/4 cup of chocolate chips
  • 1 cup of raisins

How to Make Breakfast Muffins:

Mix it all together. I saved the chocolate chips for second to last and the raisins for last. No particular order for mixing or adding ingredients.

Bake in preheated oven at 375 for 20-23 minutes. I sprayed my muffin tin first and they still stuck a little so make sure to spray it well.

Delicious. I got 12 muffins plus 18 mini muffins for the kids to enjoy as well. So it’s not a small batch.
