Peanut Butter and Jam Bars

Peanut Butter and Jam Bars, everything a BP & J sandwich has, plus you know a bit extra sugar, and we could all stand to be a little sweeter I’m sure. We all love these, Hubby included. You probably won’t want to make these all that often or eat too much of it. But boy oh boy are they good.

We are big peanut butter fans here, and my kids want nothing but the brand name peanut butter here. And they get that from me. Oops. But I do buy the store-brand peanut butter for baking because once you add in other stuff, you don’t even notice. But you, do you.

These are a fun dessert take on the traditional peanut butter and jam sandwich that I honestly forgot how easy they are to make.

What You Need:

  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 1/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 tsp baking powder
  • 2 cup flour
  • 1 1/4 cup peanut butter
  • 3/4 cup jam of your flavor choice

How to Make Peanut Butter and Jam Bars

Start by mixing together the eggs, brown sugar, and butter. Add in the baking powder, vanilla, flour, and then the peanut butter, we buy Kraft 25% less fat smooth, it’s become the only stuff my daughter calls good, and she is a peanut butter lover just like her Momma.

You are basically just working your way down the recipe, mixing as you go. Don’t over mix the flour and peanut butter in.

Press 3/4 of the peanut butter mixture into the bottom of a 9 x 9 pan. I left the edges a bit higher so the jam doesn’t run off and stick to the sides. This makes it easier to clean the pan and cut the pieces.

Spread jam over the peanut butter layer, or you could do a layer of chocolate or hazelnut spread.

The remaining peanut butter becomes a crumbled layer over the top. I use my hands to do this part, the dough is like a cookie dough so that you can handle it without making a mess.

Bake for 30 minutes at 350. Make sure to allow it to cool before you try to cut it. Ours always end up in the freezer trying to get them to cool faster.

I have also made these with Chocolate Hazelnut spread. It is so freaking good too!

These are delicious. Something you could make up and take on a picnic, or to a potluck.

Cutting the Sweetness

You could also use a sugar-free jam to help cut some sweetness, which is what I do usually use, but at this time when photographing, I didn’t have it.

You could cut back some of the brown sugar but I have not done that so I do not know how it will be in the end.

Peanut Butter and Chocolate Bars

I have not used natural peanut butter so I don’t know how it would affect the overall texture and taste. But you are welcome to try it and let me know how it works for you.
