This week leading up to Valentine’s Day I thought I’d share some of our favorite slow cooker recipes. Who wants to cook on Valentine’s Day? And honestly, I don’t really want to go either because every restaurant is going to be packed. I would rather spend a quiet evening at home and enjoy a good meal too. To start it off I love scalloped potatoes like my mom used to make, my mother-in-law made them once (that I had them) with cream corn in them, DELICIOUS! Hubby however is not a fan of them. I had tried making them once, while I can’t exactly remember what went wrong, I just know they didn’t turn out at all good.
When I found a recipe for scallop potatoes with sour cream I figured I would give them a try, but in the slow cooker.
Sour cream, condensed soup (I used an alternative for cream of whatever soup.) and Worcestershire sauce mixed together and spread over the potatoes.
Add your cheese, spreading it over the potatoes and sauce, and then sprinkle paprika over it all.
Now, while I am not a huge fan of sour cream, these were really, really good.
Hubby devoured his! While he will eat just about anything he usually covers potatoes in ranch, but he didn’t with these, they must be good.
Both girls ate them up without a fight, lately that’s a blessing in its self.
Ingredients
- 1 cup sour cream
- 1 can condensed soup
- 1 tbsp Worcestershire sauce
- 2 lbs potatoes
- 1 1/2 cups cheese
- 1/2 tsp paprika
Instructions
- Slice potatoes thinly and layer over the bottom of the slow cooker.
- Mix the sour cream, soup and worcestershire sauce together and spread evenly over the potatoes.
- Cook on low for 7 hours.
- About 30 minutes before eating, add the cheese and paprika to top of your potatoes.
Come back tomorrow for a Pulled Chicken Burger from the Slow Cooker !
