I remember growing up and dreading the odd time that my Dad would make meatloaf, I detested it. I think all it was was vegetable soup mixed in with the ground beef, eww. Judging by Hubby’s reaction the first time I made this stove top meatloaf, he wasn’t a meatloaf fan as a child either.
We are such big stove top fans… well, my oldest claims she hates it, but she eats it when I make meatloaf or when I make Stove Top Chicken Casserole. She doesn’t just doesn’t know she likes it I guess. Or this Momma has gotten good at “hiding” the good stuff when cooking.
Stove Top Meatloaf

I dislike touching raw meat so much that I have other ways of dealing it, like mixing ground beef and all the ingredients together for meatballs or meatloaf. One of those ways is to use my potato masher. I love this thing, it is worth it’s weight in gold to me. It mashes my potatoes, mixes ground beef with whatever I need, I also use it when I am browning ground beef and want to break it up.
I like to mix together my ground beef with all the ingredients without the stove top first, just to get it mixed really well.
Make your stove top according to the package instructions. Try not to just sit down with a fork and eat it all like I could, save some for the meatloaf.
Add the stove top into the bowl with your ground beef and the remaining ingredients, if you are mixing this with your hands, make sure to let the stove top cool down a bit first.
I would love to have a meatloaf pan, but in the mean time I use a cookie sheet lined with tin foil, and a sprayed down cooling rack. Form it into a log, and place on the cooling rack. All the fat drains off, and you get a crisp-ness to it that I kinda like.
I like to drizzle a ketchup or bbq-sauce over the top of our before cooking.
Bake it, let it cool for a few minutes before cutting into it.
This is without a doubt our favorite meatloaf recipe.
- 2 eggs
- 1/2 c water
- a small onion chopped up
- stove top dressing, prepared
- salt and pepper
- two splashes of soy sauce
- 1 1/2 - 2lb ground beef or other ground meat (I now prefer ground chicken in this recipe than beef)
- I mix everything together, no particular order. 375 for 45 minutes or until done, every oven is different. More often than not I use my muffin tins to make individual sized mini meatloafs. (A is more likely to eat them that way. ) My muffin tin was already in use today. When using this method to cook them: 350 for 15-20 minutes.
