Baking Cinnamon Cookies

Everyone once in awhile I just need to either find something to entertain Brookland or put her down to nap a little earlier so Austin and I can do something together. One thing that it still just for her is baking. Brookland isn’t quite old enough to help. Today we made some of Austin’s favourite cookies – cinnamon cookies.

Simple, and get this low in calories! Makes me feel a little less guilty as I am stuffing my face full of them.

  • 3 1/4 cups of flour
  • 1 cup of sugar
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 3/4 cup of oil
  • 3 eggs
  • 1 tsp vanilla

Cream sugar, eggs and oil together. Adding the vanilla, baking powder and cinnamon. Gradually add in the floor.

I admit, this is one cookie dough that I’m not sneaking pieces. It’s not the 3 eggs in it – I’ve eaten a lot of cookie dough without problems. This one doesn’t taste so good. *Insert sad face.*

Bake at 375 for 12-15 minutes. Watch your cookies. I burnt mine. Yup. First time baking them in this oven and the bottoms were black, tops golden.

Don’t they look great? Can’t even tell that they are burnt, unless you look too close at the bottom edge.
